Biscotti Recipe
Just thought I'd share my Biscotti recipe! It's cheap, easy and good to give as presents- it will last for 2 weeks :)
Almond Biscotti
ok this is twice baked you need... 300 g plain flour, 200 g caster sugar, 1 tsp baking powder, 1/4 tsp salt all that goes into one big bowl.
then in another bowl whisk 3 eggs with 2 tsp of vanilla essence. Add the wet to the dry ingredients. then add 100 g whole blanched almonds. after mixing the dough will be sticky.
divide the dough between 2 baking sheets and shape into flat loaves about 25 cm long and 5 cm wide. Bake at 150C for 35-40 minutes until pale golden. remove from oven and immediately slice into thin pieces (1cm or so wide). Lay pieces on one side and back in oven for 10-15 minutes, then take out and flip and cook for another 10 minutes or til slices are golden. then allow to cool. Store them in an airtight container.
lemon and pistachio
substitute 2 to 3 tsp of lemon zest for the vanilla essence and pistachios for the almonds
chocolate chip and raisin biscotti
substitute 75 g raisins and 75 g of plain chocolate chips for the almonds
fig and fennel
substitute 75 g chopped dried figs for half the almonds and 2 teaspoons of fennel seeds for the vanilla essence.
