Apricot Chicken
Im doing Apricot Chicken tomorrow night in the slow cooker. Its a maggi packet mix and only says to add onions. Would you add vege (peas, carrot, corn) to it or cook later and add as a side dish??
also would you serve with mash, rice or pasta??
sry for the questions im not feeling very creative in the kitchen lately and im struggling with finding something different to cook everynight.

I usually serve mine on either rice or almond couscous.
I don't usually add any extra vegies though... We're all pretty boring here when it comes to our apricot chicken... I do however add extra apricot halves to the mix :)

I do add veggies, sometimes carrots, peas, zuchini.

I love saucy dishes with mash. They just go together. I normally add veggies as a side.

I add dried apricots, usually serve with rice and vegies on the side.

You can make apricot chicken easily without a special packet.
Get chicken noodle soup mix or french onion soup mix (the 49c packs are fine)
apricot nectar
onion
chicken
(whatever extras you want)
A) you can chuck everything in
or
B) roll the chicken bits in flour/soup mix
then chuck everything in
extras
onion, carrot, zucchini, peas, corn, apricot halves or dried apricots.

And you can even make it without any packets at all, if you are that way inclined! I add a tablespoon of Dijon mustard and some ras el hanout (middle eastern spice blend, you could use cumin or saffron) to mine and it kicks butt.
the recipe I use is this:
1/2 cup plain flour
1kg (8 pieces) skinless chicken thighs or breasts, trimmed (I use breast pieces, cut into thirds)
2 tablespoons olive oil
1 large brown onion, peeled, cut into thin wedges
2 garlic cloves, crushed
1 tablespoon Moroccan seasoning blend
405ml can apricot nectar
1/2 cup Dried Apricots, chopped
1/3 cup flat-leaf parsley leaves, chopped
I just fry the onion and garlic, brown the chicken, then bung it all in the slow cooker (except the parsley, which goes on at the end.) You can also add a dollop of sour cream too which is nice.
