I'm starting to do big cook ups and freezing meals in prepartion for bubs arriving. With stews I normally serve them with mashed potato, but mased potato normally doesn't freeze particularly well, do people freeze an accompaniment veg with stews or prepare veg on the night of eating?
I prepare on the night of eating. I have never thought to freeze mashed potato as I imagine that it would come out like sloppy mush when defrosted.
Rice freezes ok, but if you need accompaniments which are quick to prepare, try instant polenta or couscous.
Good on you for freezing-ahead - I did this with DS#1 and found it quite helpful. Good luck :)
