I kinda thought it was the egg that held them together...potato and melted cheese might stick together though?
Why don't you start a thread about no-egg meals? I bet you'll get heaps of ideas. Like risotto, stirfry and soup, for starters.
* Bubble n' Squeak * came to mind ... mashed potato & chopped vegies then lightly fry or better still grill em (i do them in the sandwich/foccacia machine sometimes if i can be bothered cleaning it after) ;)
Frittata is mostly egg so no you can't do that...
Fritters yes you can, you would need some "No Egg" or "Egg like" binder, some flour, maybe creamed corn (as it also acts as a binder) and then whatever you would like to add ie tuna, potato etc.
I'm sure you already use "No Egg" or "Egg like" but basically it is a powder that you can use as an egg substitute, I've used it many times for vegans.
yes we already use no egg but i was HOPING i could make a fittata..or quiche with out the egg! hehe

Frittata and quiche won't work with no-egg. It's a bit sad. What you can do instead though, is make a really sloppy polenta - 1 part polenta to 5 parts water (or vegie stock) pour that over your frittata ingredients and bake. Nice hot, AWESOME cold, especially with salad. It might satisfy your craving.
No-egg is pretty good for fritters. Also a good option is using psyllium husk, let it sit for a while, and it will gloop up and make stuff stick together nicely.
