I want to make up the dough and freeze in rolls, just a basic recipe even would be good as id judt be using whatever is to hand.

Ooh I do. I make them all the time with the kids so we always have them on hand in the freezer. Gimme 5 and I'll find it.
Here it is:
Easy Freezy Basic Vanilla Bikkies
150g softened butter
3/4C Caster Sugar
1/2tsp Vanilla extract
1 egg lightly beaten
2C Plain Flour
(I usually put mini M&M's into this mix as well.)
Preheat oven to 180
Using electric mixer, beat butter, sugar and vanilla until light and fluffy. Add egg and beat until combined. Sift flour over mixture, stir to combine. Place dough on lightly floured surgace and roll into 2 15cm long logs. Wrap each in plastic wrap, twist end to seal. Freeze for 2 hrs or until firm.
Remove from freezer and slice into 1cm thick rounds. Place on baking tray 3cm apart. Bake for 16-18 mins.
Triple Choc Variation:
Add1/4C cocoa powder sifted, 1/4C dark choc chips and 1/4C white choc chips after adding flour in original recipe. Then prepare and bake as original recipe.
White Choc Macadamia Variation:
Add 1/2C finely chopped macadamias and 1/2C white choc chips with flour then prepare and bake as original recipe.

They keep in the freezer for ages too. We always seem to have a batch or 2 in there.

so when you remove from the freezer, say a week or two later, do you need to wait til it's fully thawed out before slicing or just soft enough to cut??
You can freeze them already cut TD - just cut them and lay them on a try covered in gladwrap and cover them in glad wrap, then when they are frozen chiuck them all in a tub or snap lock bag
That way you can take out 3 or 10 or 6 bikkies at a time, whack them straight in the oven frozen :)
I usually leave them on the bench for a few mins to soften a bit then cut them. You bake them frozen though.
This makes absolutley s&%tloads of biscuits and is really easy and cheap.
1 tub margarine
1 can condensed milk
3/4c sugar
4c SR flour (maybe a bit more depending on stickiness of dough)
Mix all together and add whatever you like eg choc chips,cocoa,cornflakes,coconut,raw peanuts etc the list is endless.
Roll into balls,flatten and bake.
I roll the mixed dough into tubes and wrap in gladwrap and freeze them. I have defrosted and baked and also baked from frozen so it works both ways just as well.
Oh they need 10-15mins in about 180 oven.
mmm These sound good. I might even be able to fool DH that I've worked hard to cook cookies instead of being on BB hahaaaaa

I did find my mix was slightly dry until after it was frozen is that normal?
I've never had that problem, it usually turns out perfect every time. It could be the egg size like Lime said or even the humidity, sometimes flour needs a touch more liquid when the weather is hot. I'm glad you liked them. They're a favourite here too.
I did use extra large eggs but it has been hot down here today so maybe it was the weather

I freeze this recipe. I usually divide the mix into 2 or 3 portions and then they make about 6-10 biscuits.
Chewy Chocolate Chip Biscuits
125gm butter
1/3 cup sugar
1/3 cup brown sugar
1 tsp vanilla
1 egg
2/3 cup SR flour
1 cup plain flour
200gm chocolate chips
Cream butter, sugar and vanilla
Add egg
Add flour
Add chocolate chips
Combine well after each addition
Spoon teaspoon sized blobs onto lined babking tray
Bake 13-15 mins at 200C, till just brown.
They should be too soft to remove from the tray until cooled- overcooking makes them crunchy, not chewy.
