Condensed Milk ... i have 1/2 tin left, What can i make with it ??

:hello: Hi all,

I have just made a slab of lemon slice and now have half a tin of condensed milk leftover (about 1/2 Cup) ...

... Does anyone have a recipe or ideas as to what i can do with it ?? :think:

I don't wanna throw it out and don't wanna make anymore lemon slice ;)

Also can you freeze condensed milk ?? ... not that i really want to as i have the buzz to make something else, lol :lol:

P.S - If anyone would like my Lemon Slice recipe please feel free to ask and i will post here (i've made a few times & everyone loves it, i put a hint of ginger in the biscuit base) !!

You could just boil it up to make caramel. But it wouldn't last that long here (not that we still eat it) - I used to looooooooove just having it on toast! Yums.

I agree with getting a spoon hehe I have the tube of condensed milk in my fridge to drink :redface: I've been having it on its own since I was about 5yrs old, my twin sister & I would "steal" dads tube from his work lunch box & drink it hehehe

I also like to make choc snowballs. 1/2 pack milk arrowroot & some cocoa & coconut ;)

... hey Leasha i've got 1/2 pkt of plain Marie biscuits (leftover from DD's party from last weekend, i made flowers on them with halved white & pink marshmallows and a smartie in the middle, they looked great ;)) ... and i also have about 6 Granita biscuits left over from the lemon slice i made. I know super shock here but i have never made choc or rum balls before (well cause Mum makes 'em and i like her's, lol :lol:) ... i have cocoa powder or rum essence, do i add coconut inside the mixture or just to roll the balls in ?? ... Is it just a matter of a sticky ball texture ? ... and how long do they take to set in the fridge approx ?? :think:

P.S - i have already licked the spoon with melted butter & condensed milk OMG YUMMMM out of the saucepan !!

I'm with Leash. There's no such thing as "leftover condensed milk" in our house - we fight over who's gonna eat it with a spoon. Mmmmm.

... i think choc balls might be the go so then DD who is 4 could eat 'em too ;)

(or could i separate some mixture and put a few drops of rum essence for DP & i to have ?? ... ah um blonde question is the rum mixture the same as choc recipe but just added rum ?? :think:)

Ok here it is...

250g biscuits
3 tablespoons cocoa powder
1/2 cup desiccated coconut
395g can sweetened condensed milk
1/2 teaspoon vanilla extract (1 teaspoon natural vanilla essence)
1 1/2 tablespoons rum (optional)

Optional - 3/4 cup desiccated coconut, for coating

Place biscuits and cocoa in a food processor or blender and crush biscuits very finely.

If you used a blender, pour the crushed biscuit and cocoa mixture into a large bowl and stir in the remaining ingredients (except the coconut for coating).

If you used a food processor, you can add the 1/2 cup coconut, condensed milk, vanilla and rum to the biscuit crumbs and process until the mixture is well combined. Process on very low speed until just combined.

Place mixture in refrigerator or freezer until it is firm enough to roll into balls (about 30 minutes in the refrigerator). If the mixture is too soft, it will be sticky and difficult to roll properly and the rum balls will not hold their shape.

Sprinkle coconut for coating onto a plate or into a flat-bottomed dish. Roll generously heaped teaspoons of mixture into balls, and then roll in coconut. Store, preferably in a single layer, in an airtight container in the refrigerator.


ETA: Shel made rum balls for her, and chocolate balls for me and Jazz. She just separated it into two mixtures before she added the rum :)

Mmmm I agree with PP...just eat it outta the tin! I even used to scrape the inside of the tin out with my finger just to make sure I didn't miss any :lol:

The thought of eating/drinking condensed milk makes me shudder, mind you my adult DD's scoff down a tube when they can.

On the practical side make another lemon slice and freeze it. Freezes well :)

.... well they are setting in the fridge as we speak :dance: ... i just halved your recipe Leasha & yeh made a few with rum in 'em for just DP & i and some only choc ones for ALL 3 of us :D

Riv ... i'm the same i get an instant headache at the thought of it until i tried it in a saucepan with butter melted for the slice i made, ooohh Yum !! Thanks for that, that's good to know about freezing the lemon slice (only i had no lemons left to make more today) :thumbsup:

*** smile4u lemon slice recipe ***

- 1/2 Cup sweetened condensed milk
- 100gr butter
- 200gr Granita biscuits (i have used Arrowroot & Marie biscuits which taste fine but Granita has a bit more taste to the base) ... NOTE : a pkt of Arnotts Granita biscuits are 250gr so i take a few biscuits out of the pkt)
- 1 Cup desiccated coconut
- 1 large Lemon, rind finely grated
- 1 teaspoon of ginger powder (optional)

+ Lemon icing +

- 2 Cups of icing sugar, sifted
- 40gr butter, softened
- juice from lemon that you used for biscuit base

Method ;

1. Grease & line with baking paper a biscuit slice tin (approx 15.5 x 25cm), make sure paper hangs over edges for easy access later.
Place condensed milk and butter in a small saucepan over a medium heat until butter is melted.

2. Finely crumb biscuits (either in a food processor or in a large plastic bag rolled over with a rolling pin).

3. In a large bowl combine crumbs, coconut and 2 teaspoons of finely grated lemon rind then add hot butter/condensed milk mixture. Stir until well combined.

4. Press biscuit mixture into prepared slice tin with either your fingers or back of a steel spoon.

5. Refrigerate for 1.5hours or until firm.

#Method of Lemon Icing#

Place sifted icing sugar, softened butter and 2.5 (two & a half) tablespoons of lemon juice in a bowl. Beat with a wooden spoon until spoon.
Spread icing over biscuit base and refrigerate for a further 30mins or until icing sets.
Cut into pieces (i cut into small rectangle/finger size pieces as it is a rich slice & you can always go back for more ;)).

It may appear to be not enough icing but for me it's ' just ' enough to spread ... so you can always make more icing if you prefer.
