I bake for dessert ... nothing fancy and all in all takes only 15 minutes to prep. Sure you can try and keep it in the fridge, but in my house, it does not even get to cool down :o Yes we are little piggies
Sieve 1.5 cup of flour, 1/2 cup sugar and pince of salt in bowl. Throw in 2 eggs, 2 tbsp apricot jam, 2 tbsp butter, 5ml bicarbonate of soda disolved in 1/2 cup of milk. Mix well. It does not make lot of dough, but don't be fooled. Place in deep ovendish and bake at 180 deg for about 25 minutes till golden on top. Test with cake tester.
While baking, boil together 1 cup butter, 1 cup water, 3/4 cup sugar, 5ml vanilla essence and 1 cup evaporated milk (or if you are really feeling up to it ... double cream)
As soon as the dessert comes out the oven, pour syrup over and let it soak in.
TA-DA!!! Serve with chunky custartd or left-over evaporated milk. Going to make some again this weekend.
I'm usually the only one that eats my desserts here...can be good though- means I don't have to share! Lol. Something super quick is tinned peaches (or other tinned fruit) and icecream or custard. If you have a tin of apples, or even apples you can chop up an apple pie or apple crumble is fairly simple and fast to make. Jelly & custard is also good, although you kind of have to plan ahead for the jelly!
A home-made muffin heated in the microwave with some custard is also nice, or my mum used to make baked apples- take the core out of an apple and stuff with mixed fruit/sultanas, sprinkle with a bit of brown sugar and cook in the microwave until the apple is tender. Serve with custard. It's a nice wintery dessert which is simple. Another one is golden syrup dumplings..ok not so quick but they are so yummy!
Well the quickiest and easiest for us is simply fruit and yoghurt (very healthy!). Otherwise icecream with some fruit or chocolate topping if it's in the house. Apple crumble is pretty quick and easy too and goes very nicely with icecream or custard.

Chocolate Marie Biscuits
2 packets of Marie Biscuits or Tennis Biscuits
500g Icing Sugar
2 Eggs
250g butter
+/- 3 Tbsp Cocoa powder
Crush Marie Biscuits but not to crumbs.
Sift cocoa and icing sugar.
Melt butter, add eggs and melted butter to icing sugar and cocoa.
Mix until smooth paste is formed.
Add biscuits, stir until biscuits are coated.
Press into dish about 1.5 to 2cm thick and place in fridge to set.
Cut into squares just before they are set.
Be careful ... to much of this is going to make you sick, but you are not going to be able to keep yourself from having "just one more" ;) And don't hate me for it :p
Ingredients (serves 8)
250g pitted dates, chopped
1 teaspoon bicarbonate of soda
1 1/2 cups boiling water
125g butter, softened
1 cup brown sugar
1 teaspoon vanilla extract
2 eggs
1 3/4 cups White Wings Self-Raising Flour, sifted
Caramel sauce
1 cup brown sugar
300ml thickened cream
1/2 teaspoon vanilla extract
60g butter
Method
Preheat oven to 180?C. Grease and line the base of a 7cm deep, 22cm (base) cake pan.
Place dates and bicarbonate of soda into a bowl. Pour over boiling water. Allow to stand for 20 minutes.
Using an electric mixer, beat butter, sugar and vanilla until pale and creamy. Add eggs, 1 at a time, beating well after each addition. Using a large metal spoon, fold through date mixture and flour until well combined.
Spoon mixture into prepared cake pan. Bake for 35 to 40 minutes or until a skewer inserted into the centre comes out clean. Turn onto a plate.
Make sauce Combine all ingredients in a saucepan over medium heat. Cook, stirring often, until sauce comes to the boil. Reduce heat to medium-low. Simmer for 2 minutes.
Pierce pudding all over with a skewer. Pour 1/2 cup of warm sauce over warm pudding. Stand for 10 minutes. Cut into wedges. Serve with remaining sauce.

Oh my .. you know what I just thought of ... those marshmallow sweets with the popped rice (cereal) ... they are just yummo for anytime. And they keep very well in the pantry or fridge. Will try and find a recipe for you
Chocolate mousse - the dairy or non-dairy way.
Dairy way
Melt one family block chocolate with 600mL cream. Wizz mix until quite bubbly. Add 1 tsp gelatin in water. Pour over chopped strawberries/raspberries/blueberries/passionfruit/stewed pear/whatever is lying around, in 6 glasses. Can also add a digestive biscuit at the base fro crunch. Chill til set.
Non dairy way
Melt one small block non-dairy chocolate (Whittaker's Dark or Green & Blacks or Sweet William) with one block silken tofu and 1/2 cup sugar. Wizz mix until very smooth. Add 2tsp cornflour slurry. Pour over fruit and/or biscuits. Chill til set.

ME!! for the dumplings ... I just love them, I make cinnamon dumplings in the microwave. Havent for a while, though, should though

Golden Syrup Dumplings
Prep Time ? 10 minutes
Cooking time ? 9 minutes
Ingredients:
1 cup self raising flour
4 tablespoons of butter
1 cup brown sugar
1 egg beaten
? teaspoon vanilla essence
2 tablespoons of milk
2 tablespoons of golden syrup
1. Place flour in a mixing bowl, using fingertips, rub in half the butter until it resembles fine breadcrumbs. Using a fork stir in ? cup of sugar, the egg vanilla and milk to make a soft dough. Using damp hands shape dough into 8 balls and set aside.
2. Place remaining butter, remaining sugar and golden syrup in a large shallow microwave safe dish. Add 1 ? cups boiling water and mix well until sugar dissolves.
3. Cook on high (100%) for 4 minutes or until simmering. Add dumplings and cover. Cook on high for 5 minutes, stand covered for 5 minutes (if you can wait that long) serve warm with ice cream or cream.
Notes:
You can cook dumplings in advance and reheat on medium for 3-5 minutes
Avoid overcooking. If using a higher wattage microwave reduce cooking time by 1 ?2 minutes. This recipe is based in a 1250 watt microwave. Mine is 1200 watt and it turns out fine.

I liked it all right, but I think the dough was a bit runny (but yummy, runny, but yummy), or I did something wrong, because I could not mould the dumplings by hand. I just dropped them in the syrup with a spoon. In the end the dumplings were more like little overdone cakes in yummy-syrup than dumpling-dumplings. Not that I'm at all complaining, because I got out about 9 dumplings and ate 4 semi-hot :redface: I did however liked it A LOT more this morning at 5:05 when DS woke me up ... so in actual fact I had 5 dumplings!!
Thanks Salad. I'm going to tweak it a bit by using my cinnamon dumpling dough and your syrup. Going to try again tonight!!
mmmm I love dumplings, I've done them in the microwave once & think I over cooked them.
I stumbled across such a quick easy & yummy sponge pudding recipe on the net when Mum & Dad were visiting recently....so quick & a real winner. I would have to look it up again for the recipe, but basically just a quick sponge batter, put that in a square cake pan.....doesn't look like much but once you roll it up. Cook in oven for like 10mins, then heat jam in a saucepan til runny, take sponge out of pan still warm, cover with jam, roll up & dust with icing sugar...serve with whatever you like. Yum & it takes no time at all.
as long as you could still eat it who cares lol

We make a quick dessert here using the pre-made tart cases. It's a lime tart.
I can't remember the exact measurements but basically we get a can of condensed milk and add the grated rind of 2 limes and the juice of 1 lime. Mix it and pour it into the pre-made tart case. Something in the limes makes the mixture set. You can add some meringue if you like and bake it but we like it on its own dusted with some icing sugar and served with some ice cream.
I usually make this using the individual pre-made cases so everyone has their own.
Fruit Salad Slice
Ingredients
Tin of tropical fruit salad (big one)
Packet scotch finger biscuits
2 tbs custard powder
1 cup water
Method
Line bottom of slice dish with biscuits to form base
Mix custard powder with water
Mix custard powder/water with fruit salad in saucepan - bring to boil stirring
Pour over base
Put in fridge till set
Slice and serve with cream
Its my absolute fave dessert and SOOO easy - even I can make it!
Bread and Jam Pudding
7-8 slices bread (with crusts)
jam (I've used raspberry, and strawberry)
cinnamon
sultanas
3 eggs
3 tblsp white sugar (optional)
300mL milk
1 tsp vanilla
Spread jam on each piece of bread, to the edges. Sprinkle lightly with cinnamon, then cut into triangles (quarter each slice).
Arrange bread, jam side up, in a lightly greased ovenproof dish (I use a mixing bowl) with sultanas (more or less, to your taste), in layers, until all the bread is used up.
In separate jug/bowl beat together three eggs, then add sugar, milk, and vanilla. Beat to combine well.
Pour gently over the layered bread, and gently press bread into egg with a fork.
Bake in preheated oven (160 ff) for about 25-30 mins until custard is baked (can test with a skewer).
Dust with icing sugar, serve with cream/ice cream/custard. YUM!
Its kind of like bread and butter pudding, but a bit different. An ideal way to use up stale-ish bread. I sometimes make this to the bake stage, and leave it in the fridge for a few hours until I'm ready to bake it, which also lets the egg well and truly soak up, then put it in the oven just about dinner time. Note, it seems to rise as its cooking, then settles back down again. I don't think its too sweet, but if you use a lot of jam, you may want to leave the sugar out of the custard mix. So far, I have only made this with white bread, but I have no doubt it would be yum with wholemeal or multigrain, if not a bit different.
Ooooh, just had an idea.... Instead of sultanas, you could use some fresh berries, especially to go with a berry jam! Just give them a little bit of a squish so they are bruised up a bit. Mmmm....
Custard cream tarts.
Ingredients:
Mini individual sweet tart cases
tub of cream
tub of thick custard (or home made if you want)
about 2 tablespoons of castor sugar (to taste)
frozen mixed berries
Whip cream til it forms very soft peaks. Mix together with custard in a big bowl. Add castor sugar and mix. Spoon into tart cases. Top with a spoon full of berries. YUM!!

Cooking Time 30 minutes
Fruit or Apple crumble
Tin of Pie apples
3/4 cup plain flour
1 1/2 tsp ground cinnamon
180g butter
140g brown sugar
1/3 cup rolled oats
Double cream or vanilla ice-cream, to serve
Method
Preheat oven to 190?C. Brush a 6cm-deep, 1.25-litre (5-cup) ovenproof dish with the melted butter to grease (if you use a shallower dish, the crumble will take a little less time to cook).
Combine the flour and 1 tsp of the cinnamon in a large bowl. Add the butter and use your fingertips to rub it into the flour until the mixture resembles coarse breadcrumbs. Stir in the brown sugar and oats.
Place the dish on a baking tray and bake in preheated oven for 30-35 minutes or until the crumble topping is golden. Serve warm with the cream or ice-cream
Variations I also use:
Rhubarb & apple crumble. Reduce the apples to 2 (about 210g each). Add 1 bunch (about 550g) rhubarb.
Tinned Apricots. Don't use the cinnamon in it though!
Fried bananas
Ingredients:
1/2 cup plain flour
Water
2 bananas
1 tbsp of ground cinnamon
2tbsp sprinkle of castor sugar
oil for cooking
Make a batter with the flour and water
Cut bananas into 1/4- in half, then slice down the middle
Place in the batter and fry in oil until golden brown
Mix the sugar and cinnamon and sprinkle onto the bananas
Serve with vanilla ice cream, YUM!
ENJOY :D
