Yeah, except they are not exactly preserved, they're buried in clay and then left to fester, and then dug up and eaten.

i buy them in a carton of 6 eggs.
Anyway, they taste a like firm egg that is slightly salty. THe outter layer is slightly transparent. If you dare, you can probably order CONGEE with century egg and salted pork from your yum cha restaurants.
Very good for if you arent feeling too well and want something light lol

Ok, the ones on the telly sound well different from the ones you just described...these were reddish-brownish and completely transparent all the way through the "white" and the yolk part was green, glistening and kinda liquid....
I can't imagine that being very good for me if I wasn't feeling well to start of with... :lol::

Amy Tan made them sound so appetising. I've always wanted to try them but I have no idea where I can order it.
We don't go to Yum Cha since we left Sydney :( I didn't know you could get it there - I don't think I've ever seen it on the cart.
I'm sure your mum's congee is very nice, but I think it would still take some convincing for me to have a go at the egg part!

i've never even heard of them till you mentioned them.....but i don't know if they sound too good. i mean, i love eggs, but preserved eggs that are a few months, i just don't know if i could stomach that.....but maybe it's cause im pregnant right now LOL.
