Looking for lots of inventive egg recipes ladies!! We are getting heaps of duck and hen eggs daily and don't want them going to waste. Lunch ideas would be especially helpful that I can send to work with hubby :)

Zucchini Slice - yummy cold
Ingredients (serves 15)
5 eggs
150g (1 cup) self-raising flour, sifted
375g zucchini, grated
1 large onion, finely chopped
200g rindless bacon, chopped
1 cup grated cheddar cheese
60ml (1/4 cup) vegetable oil
Method
1.Preheat oven to 170°C. Grease and line a 30 x 20cm lamington pan.
2.Beat the eggs in a large bowl until combined. Add the flour and beat until smooth, then add zucchini, onion, bacon, cheese and oil and stir to combine. Pour into the prepared pan and bake in oven for 30 minutes or until cooked through.
Very Easy Quiche
Mix together:
3 eggs
1/2 cup milk
1/2 cup oil
1/2 cup self raising flour
Add any of the following that you like:
Leftover BBQ Chook
Grated Cheese
Chopped up tomato
1 tin tuna/salmon - 185-210g tin
1 onion, chopped
spinach (or any veges)
Mix all together and bake 1/2 hour at 180. Let set for 10 mins.
You could make things like pikelets, that can be taken the next day....or hard boiled eggs with a salad.
Hmmm I usually just make egg salad, curried egg, omlettes, quiches etc with eggs, sorry I haven't given you anything fancy shmancy, I'll be interested in what others can suggest as I also get lots of eggs from my parents farm.

we had ham & vegetable slice tonight....kids and DH love it. Got it on the taste website and it is a favourite in our house. Easy to make and great the next day cold.
Not a lunch idea but still tasty.. Vanilla Slice :) Erin I love the Taste website, and I get the Good Food Magazine delievered to me each month. It's only $50 a year but well worth it, I cook so much stuff out of them
:bump: I have one and a half dozen eggs in my fridge that I need to use up. My cupboard and fridge are very bare, so I cant make zucchini slice (aww :( ) or quiche, etc. I have no pastry, no food processor to make my own pastry even though I do have butter and flour.
I hope to make some cupcakes and put them in the freezer, but that's going to be a lot of cupcakes! I don't have much of a baking tray, only 1 round cake tin and standard 12 hole muffin tray. I don't even have a mixmaster machine to mix up batters! (what I had in our old place is still at a friend's place, hours away, and I'm pretty sure some of it isn't even there after she cleaned out most of our old place for us, before the landlord locked her out).
So, any more ideas as to what I can make? These eggs need to be used very soon. I can do a little bit of shopping maybe later or tomorrow, but not a whole lot. Thanks.

I don't have much to put in it at the moment! :redface: I think I will definitely have to go shopping for some pastry, bacon, vanilla (cos I'ce got less than a teaspoon in the bottle!), and some other things. Some more flour wouldn't go astray either.... I'vee chopped up some butter and its softening on the bench. In the mean time, I guess I had better do a stocktake as to find out what i *do* have. :shakehead:

I am going to try my hand at making pasta! Have some frozen chooken mince, so will have a go at making tortellini. At least I have a good size bench to work on, some big mixing bowls and a rolling pin! Wish me luck! Also saves me putting the oven on for cupcakes, being that it is 36 degrees here!
Sauces/dressings are a good way to use up eggs... Caesar dressing, mayos etc.

Netix - if you don't have a food processor you can still make pastry by hand, it is really quick and easy. Good luck with the pasta, sounds yum!

My pasta is sitting in the fridge cooling down. Dd and Ds helped me knead it. They had a ball.

Well I must report with some annoyance that the Torellini failed abissmaly. They started off okay, but the kids were mucking around, and I ended up getting very agro. I don't do well in the kitchen when I am angry. :hide: They went so badly infact I ended up only being able to mutilate one into shape, then scraped the rest up and turfed them into the rubbish bin. I couldn't even give it to the dog as it had onion in it. So was doubly peed off as I had to chuck it out! Still have three quarters of the pasta dough in the fridge, which will have to wait for a better mood and time constraints to be able to be made into noodles. Or something. Else that will end up been chucked out too. Dammit I hate throwing food out.
So since no tortellini for dinner, am just going to make a fritatta! And since the Boy 'doesn't eat tuna or salmon from a tin', looks like its just going to be vegetable! :rolleyes:

How frustrating! I was so impressed that you were going to make your own tortellini!
My quick quiche recipe is similar to one posted by Boo boo, but has less fat, so is maybe a healthier option:
4 eggs, 1/2C SR flour, 2C total of milk and cream, sour cream or plain yoghurt if you have it (but it's fine with just milk), 1 Tbsp melted butter, pinch of salt and a few grinds of pepper.
Mix these in a bowl with a whisk, then stir in whatever else you like or have available ,eg, cooked meats, tinned fish, bacon, shredded ham, grated cheese, goats cheese, crumbled feta, capsicum, mushrooms, sweetcorn, swiss chard, broccoli, asparagus, spinach, tinned chinese vegies (water chestnuts, etc)...
Pour into a large pie dish and or muffin tins and bake at 180degC for 45 minutes (Less for muffin sized ones - about 25-30 minutes).
Remember that the egg is a protein source, so you don't need to add meat to make it a balanced meal. What happens is that the flour in the recipe kind of settles a the bottom and makes a thicker base to it, so you don't need a pastry shell. This makes it a really healthy option, but you still get the yummy quiche flavours. i think it';s the metlted butter which makes it not stick to the glass pie dishes I use. I add as much veg as I can, as long as the egg mixture just barely covers it in the mixing bowl when I push the veg down. It's really tasty cold, too. With a light side salad to make the plate look pretty, this easily feeds 2 hungry adults, with enough for 1-2 light lunches the next day. if you want to make it more for lunches the next day, it would probably fit nicely into a baking tray about 25cmx15cm or so, and them you could cut it into nice rectangles or squares.
Our favourites are mushroom and rainbow chard (I steam the chard first so it shrinks down) and of course the 'lorraine' with bacon. I once put in the last night's left over Chinese takeaway fried rice and chicken in some kind of sauce, and DH didn't even realise it was a leftovers meal. I also did one that had a ridiculous amount of caramelised onions in it with no other fillings, and that would have been awesome if I hadn't burnt it in the oven.

I didn't even get to make fritatta, I thought that i would probably just burn it anyway, so didn't even attempt. I just boiled up some (packet) pasta, fried up some onion and garlic, threw in frozen veg and a jar of tomato sauce. Dd and ds didn't get any 'coz I made them have their leftover lunch!
cabonara - cook pasta (fettucine good) and in a frypan sweat some onions, brown some bacon or ham. take 2-3 eggs and beat, add in a little of water from the pasta. Take the frypan off the heat, drain the pasta and put the pasta & onion/meat mix together. Start tossing with tongs and add the egg mix, keep tossing (may need to add a little more pasta water) until the mixture is creamy. The heat left in the pasta will cook the eggs. Yummy & healthy too!
