Roast Chook and salads!
(please note, I will NOT be cooking the chook! I shall allow that privilege to go to Red Rooster!)
White bread rolls with prawns lettuce and thousand island dressing, yum yum!
Lots of salads, BBQ chooks, steak, simple quick pasta with a light fresh sauce
I know we will NOT be turning the oven on at all (she says as the oven is currently baking muffins!)....tacos, cold meat and salad, see if I can convince DH to barbecue at least once, maybe a pasta dish, maybe a pilaf in the rice cooker??
Pity we don't have any lasagne or bolognaise in the freezer....
It's -2 outside right now.
Tonight we will be having a full Sunday Roast. I am also doing a lot of casseroles, bakes, stews and anything that keeps me near a hot stove!
Anyone want to swap?

Salads, BBQ and a sneaky Chinese take away are all on the menu this week!

Do we have to eat?
I'm doing things that can be prepared during the day while the kids are sleeping/occupied and can then just be thrown in the oven/pan when needed. Tonight was chicken, sweet potato and apple nuggets with creamy tuna, egg and veggie salad. Tomorrow will probably be lasagna. Thankfully our air con works well so I don't mind cooking during the day if I've got nowhere else to go.
I'm doing the 12 week body transformation, so I'm sticking to that.
If I wasn't, I'd be putting things on like rice paper rolls, thai beef salads, etc.
Lots of fresh fruit, mineral water, etc.
DH has proclaimed this week bbq week - so meat will be cooked on the bbq, salad sides. left overs for lunches. easy peasy
dad is working each night driving a taxi and just dropped off some money for us to buy extra meat so he can grab something to eat each night too :)
I'm making pulled chicken in my slow cooker to have with soft tacos.
BBQ marylands with mash potato and basil, Roma, mozzarella salad
BBQ Koftas, pilaf and salad
Chips at the beach one night.
It's funny in hot weather I crave food from hot countries. Chilli, curry and Pho.
BBQ, salad and take away pizza. Smoothies
i should try to bake in the morning to have snacks for the week.
I'm going to cook a corned beef in the slow cooker to serve cold with salad....
Not sure about the other nights yet lol
Ok. I forgot I had steak. So we're having that tonight. I'm doing slow cooker roast potatoes and a corn salsa.

I am so daft I didn't know today was going to be got too. I promised the kids pizza. The dough is done and I have loads of yummy topping things in the fridge (including pineapple lol) I'm not sure I am clever enough to cook it in the BBQ, but at least the oven won't be on for too long.
Then wraps one night for sure. Love rice paper rolls, so I'll use that idea. I have never heard of slow cooker roast potatoes, so I might google that too.

The beautiful miss Lucy M was the one who taught me to pull out the slow cooker in hot weather. She lived in Darwin and said it was the best way to cook without heating up the house. People think slow cooker and winter but we use it a lot in summer. Great for sides with the bbq. Great for cooking meat too.
I'm following the CSIRO plan at the moment. On the menu this week is lamb roast, baked fish and a chicken meatloaf, from what I can remember! Pizza tonight though, usually the case when DH has his first night off lol.
Nothing wrong with putting the slow cooker outside either :)

I use my slow cooker all the time in the heat.
Jo the BBQ is really really easy....have a go. My DH was surprised when I mastered it so quickly lol.
We had a simple pan fried warm chicken salad and roast potatoes done in the air fryer tonight. I'll get the slow cooker out maybe tomorrow.
Loving fruit with salads. Threw some blueberries into my ham salad today.
I'm itching for some dragon fruit and paw paw in this weather. Wish I could get some.
Stovetop or slow cooker, thighs or breasts. Cheats version is a jar of salsa. I do it with tinned tomatoes, cumin, onion, capsicum, marjoram, oregano, salt & pepper. When they are cooked shred with a fork. Goes great in wraps or tortillas. If you google pulled chicken there are heaps of recipes.
Thats too easy, will be doing that this week for sure :)

Ooh definitely doing pulled chicken! Maybe tomorrow night in tacos! My kids go nuts for tacos. Off to google some recipes.
We had a barbie tonight with friends over. DH and my friend's DH were outside doing the BBQing with five kids at one stage, while me and my friend sat inside under the a/c with a glass of wine :lol:
I think I should cook like that every night.
Other ideas... Err, not many. The temptation to buy roast chicken and deli salads is strong. Putting me off that idea is the thought of dragging three kids to the shops in 43 degree heat...!
Ooh my ILs are back from the beach. I think we might hit them up for dinner one night or two... They have evaporative a/c through the whole house.
And you can add chilli too. But I keep the chilli to mine and DH's so the kids are chilli free.
