I have one that is a variation on the one above and every time I make it - it is demolished.
Creamy Boscaiola dip in a crunchy cob loaf
50g butter
1 onion, chopped
4 bacon rashers, chopped
200g button mushrooms, sliced
1/3 cup plain flour
2 cups milk
1/4 cup sour cream
4 spring onions, finely chopped
Preheat oven to 200deg. Scroop the insides out of a cob and bake for 10 mins
Melt butter in a pan. Cook onion and bacon for 3 mins. Add mushrooms and cook a further 5 mins. Add flour and cook 1 min. Remove from heat and gradually stir in milk. Return to heat and stir until it boils and thickens. Remove from heat and stir through sour cream.
You can keep this warm until you are ready to serve and just pour into the cob topped with the spring onions
