Now you've all got me thinking about getting a slow cooker, but being a vegetarian I'm wondering if it's worth getting or is it more of a meat cooking/casserole-y kinda thing?
Does anyone do any vegetarian cooking in their slow cooker or am I dreaming?

I got a slow cooker for mothers day yesterday and I am so looking forward to using it! Although DH says I can't have it until mothers day, but thats ok cause I am spending the week finding recipes.
Wardygirl the instruction booklet for my slow cooker has some vegetarian recipes, there's dhal, chick pea curry, vegetable primavera, chilli bean and veg - and you can also do rice dishes, desserts, bread... and slow cookers are really good for cooking lentils, chick peas etc for meals - so yes, you will definitely be able to do vegetarian meals in one!

Macaroni Beef --- YUUUUUMMMMM! One thing though Cai, how do you stop the topping going lumpy?

This one is delicious and great for a semi fancy meal...yummy!!!!
Bacon Wrapped Chicken
Serves 2 WW points 4.5
2 small chicken breasts
1/2 Tbs fresh chopped basil
15gm parmesan cheese
2 Rashes bacon
Preheat oven to 220°C
cut horizontal slit 1/2 way through each chicken breast
Combine basil and cheese and fill each chicken breast with 1/2 mixture
Wrap bacon around breast - secure with Toothpick
Bake for 15-20min....
Even fussy DH loved this one...

I love this one had it last night!
Lamb Tikka
Serves 2 Points value 3 1/2
Prep 10min plus 1hr marinating cook time 15-20min
Ingredients
1/2 tsp ground cumin
1/2 tsp ground tumeric
1/2 tsp minced ginger
1 tsp minced garlic
1/2 cup low fat natural yoghurt
200g diced lean lamb
1 onion
1 red/green capsicum (can have 1/2 both)
1 lebanese cucumber
4 lettuce leaves
1/2 tsp garam masala
6 wooden skewers soaked in water (i prefer metal ones if you have then)
Method:
1) combine cumin, tumeric, ginger, garlic & yoghurt in small bowl and stir in lamb. Cover & refridgerate for 1hr
2) After refridgerating, thread lamb peices, onion wedges and capsicum onto skewers
3) Heat grill to medium hugh and cook kebabs for about 15min, turning often and baste any remaining marinade during cooking
4) Arrange lettuce & cucumber onto a serving plate and top with kebabs. Sprinkle with garam Masala & whala!

Tandoori Chicken
Serves 2 Points Value 4 1/2
Ingredients
2 tsp minced garlic
4tsp tandoori paste
4 chicken drumsticks skin removed
2 Tbs low fat natural yoghurt
2 Tbs corriander chopped
Method:
1) combine garlic and tandoori paste, brush chicken with paste mix
2) heat a grill to medium-high and cook chicken for 20-25min until browned and cooked through (i also like to cook them in the oven, takes similar amount of time)
3) Serve chicken topped with combined chutney and yoghurt, sprinkle with coriander
i like to serve it with steamed rice or cous cous.

Easy one
Veal Campagnola
Serves 2 Points value 5 1/2
Ingredients
250g Veal Steaks
2 Tbs Tomato Salsa
1/2 Medium Avacardo
60g weight watchers cheese sliced
Method:
1) Heat a small pan coated with cooking spray to medium and cook veal on both sides until browned and just tender. Transfer veal to a small flat ovenproof dish and set aside
2) Spoon tomato salsa onto veal and top with avacardo slices. Arrange cheese on top & place under a hot grill. Cook until cheese is melted.
3) Serve with your choice of point free vegies

Cailin - I made the brownie slice!! Yuummmm!!! But I swapped the white choc bits for nuts - delish! I also made a coconut slice & cornflake slice (not low fat, but lower than usual IYKWIM)
