For a variation on mayo (particularly if dieting!) - mix together honey, dijon mustard, olive oil (onions are optional). Make the consistency sort of liquidy and then add fresh herbs (thyme, parsley etc) whichever you like.
It is really light and very tasty.

Sweet Potato Salad
2 large sweet potatoes, cubed (about 1 cm x 1 cm)
4-6 rashers of bacon, diced
2-3 sticks of celery, diced
1-1.5 cup of Hellman's whole egg mayonnaise
Bake the sweet potato until golden. Fry bacon. Place bacon, sweet potato and diced celery in fridge to cool. Once cool enough, stir through mayonnaise, just enough to coat.
This will serve about 4-6 people.
instead of mayonnaise on the potatos I use extra virgin olive oil, that has had a peeled & chopped/bruised garlic clove soaking in it overnight in the fridge, and sone chopped spring onions.

There seems to be such a wealth of knowledge out there I thought I'd try and tap it - does anyone have an interesting cous-cous salad recipe? I've tasted a few in restaurants that I really like - warm and cold - but can't seem to find a good recipe.

Im really annoyed, I had a GREAT one and I can't think of it. It was cold and the dressing had honey and lemon. It had mint and coriander and pumpkin through it (diced pumpkin cooked and then cooled). I have a feeling it was in a marie claire cookbook, so if anyone has one of them they might know the recipe. Definately in the Marie-Claire book! The one called off the shelf I think, I love that pumpkin & cous cous salad...

Usually something with bacon, onion (shallots are good) and whole-egg mayo is delish!!!
I think I've heard of some people adding in a bit of seeded mustard too, just as a bit of an alternative??

I have also made a yummy one with smoked salmon, equal quantaties of sour cream & egg mayoinaise (I use the american one as to me its the best S&W I think its called) & chives/dill & capers (you can play around with flavours!) AND OMG its YUMMO!

I didn't when PG with Jacob just to be on the safe side, but I seem to recall my OB saying something about commercial products being fine as they are pasteurised, it's the home-made mayo's etc that are the concern because they aren't pasteurised??
You got it in one ;) The stuff in the jar is fine its the fresh stuff you have to stay away from ;)

I'm making this for a party today:

So whole egg mayo bought in a jar is okay? That's good to hear!
Here's a Potato Salad recipe I made on Sat night & everyone loved!
3 x Red Onions sliced very finely.
500 Kipfler or baby Potatoes. (UNPEELED)
1 Tablespoon oil.
Put oil in a large heavy based fry pan, add the onion & cook slowly on very low turning every few mins until golden/caramelised (approx 30+mins) has to be down really low....?
Boil the Potatoes for about 10 mins until soft when piecred with a knife (I had neither potatoes so used normal potatoes but cut them into large chunks (quarters) as you need large chunks of poatato so if some are really large baby or Kipfler or any other potatoes cut to be realtively same sizes..
Drain the potatoes & place in salad bowl, add the onions, mix gently as potatoes should not get mushed/mashed...
Chop finely half a bunch of Chives & add half to the potato/onion mix...
In another bowl make this sauce.
250G Mayonaisse
1 Tablespoon of Sour cream
1-1.5 teaspoon of dijon mustard
half a lemon squeezed
then add the remainder of the chives, whisk together & pour over the hot potato & onion..
Grill 3-4 bacon rashers & chop coarsely & throw over the salad, can be served immediately warm or chilled...
It is beautiful....
