a nice ham one is:
1 large ham hock
1 parsnip
1 onion
2 potatoes
1 turnip
celery
2 carrots
(what ever other root vegies you want)
soup mix (barly, lentil etc)
bacon stock cubes
salt and pepper and water.
fill a large pan with water and ensure ham hock covered in water and allow to come to boil. Add all vegies and other ingredients and allow to simmer stirring frequently to stop barly and lentil sticking. Simmer for around 2 hours, remove ham hock and cut meat off and put meat back in pain and stir well.
You can liquidise soup if you want it smooth or serve chunky!!!!

Ohhhh... my favourite soup is
Pumpkin, sweet potato, leek & coconut milk soup
This is sooooo yummy!
1 tbs oil
1 onion, finely chopped
1 small leek, finely chopped
500g pumpkin, peeled and cut into 2 cm cubes
350g orange sweet potato, peeled and cut into 2 cm cubes
1 lt vegetable or chicken stock (I use chicken)
270ml can light coconut milk (I use coconut flavoured light evaporated milk to make it lower in fat)
3 tbls chopped fresh coriander leaves
Whole coriander leaves to garnish
(you can leave the coriander out of you like)
Heat the old in a large saucepan over medium heat. Cook the onion and leek for 3 mins or until soft.
Stir in the pumpkin and sweet potato, add the stock then cover and bring to the boil.
Reduce the heat and simmer for 15 minutes or until vegies are soft. Mash roughly with a potato masher.
Stir in the coconut milk and chopped coriander. Season with salt & pepper. Garnish with coriander.
