I think we're having Lamb chops with mashed potato, roast pumpkin, carrots and peas. Good old dairy-free dinner LOL!

Janie..I am making my own. I got inspired as our lemon tree had so many lemons on it, I was thinking up ideas to use them.
1/2 cup lemon juice
2 tablespoons honey
2 teaspoons grated ginger
1 cup chicken stock
1 teaspoon soy sauce
1 tablespoon corn flour
2 tablespoons water
4 medium chicken breasts, halved horizontally
2 eggs lightly beaten
cornflour, to coat
oil for frying
spring onion for garnish
Place Lemon juice, honey, ginger, stock and soy in a small saucepan. Bring to boil. Mix the cornflour and water together. Add to the sauce and simmer till thickened. Remove from heat
Trim chicken of excess fat. Dip into the beaten egg and then into the cornflour. Shake any excess conflour.
Half fill a wok with oil and heat until a cube of bread browns in 15seconds. Add chicken and cook for about 5mins or until golden and cooked through. Drain on crumpled paper towel.
Gently rewarm the sauce. Slice the chicken and serve drizzled with the sauce and garnish with spring onions.
I got this recipe off the net..it seems easy. I have just done the sauce and have my rice in the rice cooker. Off to bath kids and then will cook the chicken. I am also having the bok choy to add some green and clean crunch to the dish.

ARGHHH!!! After doing the whole pie by myself, df waltzes on on and wants to put the mash on top...he's slathering it on like a frigging brickie with the spatula, I'm standing there saying do it properly, don't be a d-head, and BOOM, he's tipped the dish and most of it's on the floor. Rarrr :angry: MEN!

Tonight im not sure what we're having, ive done all the meat shopping so whatever we feel like i will cook then freeze the rest, maybe beef strog? mMmMm
day before shopping and theres hardly anything in the fridge, freezer and pantry so ill some how scrape together steak with scalloped potato and vegies

We were going to be having chicken parma and veg, I went out this monring and bought it all especially and then remembered I woudln't be home :doh: So it's probably going to be Maccas now.
I'm going to have my first attempt at fajitas. Hope they turn out ok because i'm really looking forward to them.

not sure how I have managed to even get out of my chair due to being super sore after a ridiculous long day cleaning all the windows in the house and then cleaning the car... But I have thrown something together that I haven't made before so I hope it turns out alright. I have put these things into a casserole dish and put it in the oven... Sweet potato chunks, can of chic peas, can of coconut milk, half a chopped onion, cardamom, cinnamon, clove, sugar, salt, sultanas and some very finely chopped mandarin peel. I plan to serve it with couscous and put chopped almonds on top.
Beef stir fry with noodles was on the table tonight, followed by.....5 minute Chocolate Mug Cake!!!! Yum yum yum! :D

Crumbed lamb cuttlets with pasta in sauce and vegies.
Parmesan, oregano and grainy bread crumbed veal schnitzel and vegies :)
Homemade Chicken, Veg & Noodle soup with fresh bread. Tomorrow I'm going to cook lamb shanks for the first time ever, DH is always asking for them...see how I got. Will put them in the slow cooker me thinks.
Tonight will be something with chicken thighs as they are defrosted haha. Might dice them and have Enchiladas, or Satay Chicken...any ideas?
Last night Risotto with calamari, DH uses the Jamie Oliver basic risotto recipe, it's really nice!
Tonight Marinated Roasted Pork Chops in soy sauce, worcestershire sauce, garlic, lemon juice, olive oil and black pepper. Serve it with some steamed vegies.
Can't be bothered to much tonight and have to drive DP to work, so frozen fish and chips it is.
