    Default Fennel salad.

    Can anyone suggest a good fennel salad recipe? I'd prefer one without orange.
    We're having marinated boned lamb roast on the BBQ for Christmas and I'm doing salads as side dishes, was thinking of fennel for something different.

    This is from the Choice website:

    1 small bulb fennel, washed and sliced thinly
    1 tomato, sliced thinly
    ½small red onion, sliced thinly
    ¼ cup parsley, roughly chopped
    2 tablespoons red wine vinegar
    ¼ cup olive oil
    Salt and pepper to taste
    1 tablespoon grated lemon rind



    Combine salad and arrange on a platter, combine dressing ingredients and dress just before serving.
    Sounds good to me. I came across some apple and fennel salads whilst googling too, which would be nice with a roast pork, especially if you don't put oit apple sauce (like me).

    Eta; the photo on Choice shows *very* thinly sliced fennel, tomato and onion, I would suggest using a mandolin.
