    Default Soup using leftover pork-on-the-bone

    We had a pork roast for dinner tonight, and there's still about a quarter of the roast left, it was HUGE! Knowing my family, and that they don't eat leftovers, I was wondering if I could boil it up with other stuff to make a nice soup for tomorrow's lunch. If so, what?

    Yep, I would give it a go. I would chuck in some onion, garlic, stock cubes, and whatever veggie you want (carrots and celery are always a good base). Thyme and/or sage work well with pork, but if you wanted to spice it up you could fry in some cajun-style spices at the start and add tomato paste, capsicum, sweet potato for some sweetness. If you want it a bit heartier, add in some carb like pearl barley, pasta or canellinni beans. I love the old story about the "stone soup" - so I don't think you can really go wrong making soup out of leftovers.

    Yum! So thinking I mighy do this anyway tomorrow! I have some pork steaks (raw still) do you think that could work too?

    I don't see why not, but you should brown them off to get the right kind of tastiness into the soup. I find soup made from bones/meat on the bones turns out better with a longer cooking time, but smaller pieces of meat work better with shorter cooking time.

    Oh far out, I forgot all about the damn thing - it was still in the oven! I've had such a hectic week, it plain slipped my mind til I saw you'd bumped the thread MD!



    Needless to say, I will not be cooking anything with it
