Default Stock-want to make it now.... :)

I want to make some chicken stock to freeze for my supply.

Do you think i could find a chicken carcass?!?

Anyways i bought some wings. How many wings do you think i will need to boil up?

    TIA

    6 should do it.
Or 12 if you chop them in half and keep the drumettes for later.

I reckon wings make better stock than the totally de-meated and limbless ribcage that they call a carcass in the shops. It's the marrow in the long bones (thighs, drumsticks and wings) that give it good flavour.

I'd get about 1 litre of stock from 6 wings, one onion, one carrot stick and one celery stick. Maybe a litre and a half.

    Ok thanks!

Good idea about the drumettes too!

I shall go make my stock!

Oh and do you ever put herbs in it? Was wondering if I should experiment this time...

Bay leaves, parsley, peppercorns. Are my main ones. Give flavour but keep the stock versatile.
