I made this over the weekend and YUMMO .... I overcooked it, but poured tons of evaporated milk over it and it was so good.
One question: DH don't like chocolate ... if I wanted to make it vanilla, what would I substitute for the 4 tbs of coco??

:bump:
Oooohhh Nadine you are so naughty bumping this. But I have just given Leah a big feed so everything I ate at dinner time went into milk production. Maybe I will have some dessert....
Mm just made it but ahem used Salt instead of sugar mm yummo not! Now i have to do it all over again and i wasted my custard :(
Don't blame me, it's that evil woman that started this thread :p :p:
Oooohhh Nadine you are so naughty bumping this.
Boomba - how in damnation did you read SALT instead of SUGAR ... oh, wait, pregnant ... explains everything ;)
I'm just going to try it tonight and plain leave out the coco and see how it goes.
 Haha Boomba, I made muffins the other day and somehow managed to measure the sugar in pounds, not grams...I can empathise!
Oh my I know how silly of me! The worst part was DH is a baker and I had to explain why there were so many attempts at such an easy receipe :)
OK, I really needed some cheering up and this sounds like the best recipe EVER! I wonder can I halve the sugar? I do in 'normal' cake recipes and don't usually have a problem. I also often subsitute apple sauce for egg, so I wonder if this will work... I will let you know.
I still want to know how to make it vanilla :( anyone??
I'm not evil!!! ;)
I wonder how vanilla custard powder would go as a subsitute? I would try it but I am watching my calories :(
Sure you are ... BUT I'M EVEN MORE EVIL mwahahahahahaha
looky what I found:
Vanilla Spicy Nut Mug Cake :o Ohhhhhhh
4 tbsp SR flour
4 tbsp sugar
1/4 tsp ground cloves
1/2 tsp ground cinnamon
1 egg
2 tbsp oil
3 tbsp milk (water or juice)
1 tsp vanilla
3 tbsp chopped nuts
Mix dry ingredients, mix wet ingredients, sprinkel some extra nuts on top, nuke for 3 minutes (or whatever your nuker does) and serve warm ......
guess what I'm trying out tonight ;)
PS - I'm calorie watching too, but I'm sure DH won't mind being a guinea-pig
Ohhh vanilla custrad powder ... another tester for DH ... I'm trying that tonight too
Nadine, for vanilla I'd just leave out the cocoa powder entirely.
How did your Vanilla Spicy Nut Mug Cake go - it sounds divine!!! Was too full after a roast for Mug Cake last night, so am trying it tonight to eat while watching State of Origin. Can't decide whether to try your version or stick with the chocolate. I could try Choc with nuts?? Hmmmmmm....................:excited:
I liked it :) I had just half, on a diet :( It's not that sweet and I think that if you grate some carrot into it, it will be utterly devine. I did however find that I would like some custard or carrotcakefrosting with it. Just to make it that extra special yummo
Going to try the vanilla custard powder tonight.
Bumping up because this cake is just too good for a 5 minute recipe!
I agree. I made one just last week! I used about 1/3 less sugar but I made choc icing to make up for it!
Mmmmmmmmmm you've just reminded me about this one! Might have to give it another go this afternoon!
