banana muffin recipe please?

Does anyone have a banana muffin recipe? Hopefully an easy one!

Mine is dead easy and to die for I normally make with mini muffins:

1 1/2 C SR Flour
1 C Sugar
3 Ripe Bananas
4 Tbs Butter/Spread/Marg
4 Tbs Milk
1 Egg

Mix together, cook @ 180C for 15 to 20 mins less (about 8-10) for mini muffins

Freeze well too Great for school lunch boxes in 5 or so years LOL!

I only have 2 bananas though..what do you suggest?

Are they small or big? I have used 2 medium before. I think you can get away with it honestly Otherwise add a couple of tablespoons of apple sauce if you have it (although its not necessary)

OMG jelvie!!!!!!!! These have to be honestly the best tasting muffins ever! I put in the 2 bananas I had as I didnt have enough SR flour to make another batch.

And I used soy milk instead of normal milk as I didnt have any.

They are so light, fluffy and full of flavour!!

Shannon posted a banana cake recipe for me which i used to make muffins not that long ago which was really yummy! DH scoffed them all down

I'll have to give Sarah's recipe a go

Forgot to mention too, my recipe is diabetic friendly all you do is substitute the sugar for splenda...

Cailin, I had some very ripe bananas that I wanted to use so I have just tried your banana muffin recipe, so yummy and easy.

LOL that was a recipe we made in Year 7 Home Economics!! I kept all of them cos I loved them!

I made another batch with brown and white chocolate chips!!

Haha my Dh is supposedly "Not a sweet eater". Something certainly changed last week

I am going to make these tonight! The no chocolate version. for starters..
