    Hi all,

    I have a bizzare feeling i have put a thread on like this before yet can't find it here so maybe it's all in my mind, oh well what a shame



    Anyway, DP bought a pkt of choc chips last night so i thought i would make some choc chip cookies/biscuits with DD tomorrow ... needless to say there is not quite the full packet now as my hand accidently fell into the pkt and landed in my gob

    So i'm a bit bored my my own recipe which brings me to ask if your could share your choc chip cookie recipes

    Mine is a chocolate choc chip cookie!! Its YUMMOOO!!!

    3/4 cup of caster sugar
    3/4 cup of brown sugar
    150 grams of butter- softened and chopped up
    2 eggs
    1 tea spoon of vanilla essence
    1/4 cup of cocoa
    1 and a half cups of self raising flour
    as many choc chips as you have left (about 1-2 cups) (sometimes i go for white choc and choc, or nuts or whatever else you might think to be yummy )

    Cream butter and sugars together- add eggs one at a time beating well in between
    Add vanilla essence
    Sift cocoa and flour into bowl and use a wooden spoon to blend
    Add choc bits

    Dough will be goo-ey

    Use a spoon and spoon blobs onto baking tray- i sometimes add a couple of extra choc bit ontop of the blob But thats me!!!
    Cook at 180* for between 10 and 15 minutes- i find under cooked is the best, coz when they cool down they are nice and soft and goo-ey!!

    It makes alot of cookies- which is good, coz they are sooooo yummy you eat them really quickly!!!

    This one is from the Post Punk Kitchen website. it is vegan. I have made them and they are really naughty and delicious and not overly sweet or fatty tasting. I used lactose free milk instead of soya.



    Chewy Chocolate Chocolate Chip Cookies

    prep time: 15 minutes | cooking time: 10 minutes per batch | makes 3 dozen

    These are brownie-like and chewy. Be careful not to overbake them, they may seem like they aren't done after 10 minutes but they are! See the variations for Chewy Chocolate Cherry Cookies and Chocolate Hazelnut (or almond or walnut or whatever) Cookies at the bottom of the directions.

    Update: Ryan at Vegblog mentioned that you might want to use a hand blender to mix these instead of your hands. What can I say? We're punk we don't need no hand-mixers, but if you want to use one before adding the chips, then go for it (but you will lose punk points).

    Equipment:
    Baking Sheet, Blender, 2 large bowls, mixing spatula, cookie sheets

    Ingredients
    3/4 cup canola oil
    2 cups sugar
    2 teaspoons vanilla

    1 tablespoon + 1 teaspoon whole flax seeds
    1/2 cup soymilk

    2 cups all purp flour
    3/4 cup dutch processed cocoa powder
    1 teaspoon baking soda
    1/2 teaspoon salt
    1 cup chocolate chips


    Directions
    Preheat oven to 350 F.

    Grind the flax seeds on high in a blender until they become a powder. Add soymilk and blend for another 30 seconds or so. Set aside.

    In a large bowl sift together flour, cocoa, baking soda and salt.

    In a seperate large bowl cream together oil and sugar. Add the flax seed/soy milk mixture and mix well. Add the vanilla.

    Fold in the dry ingredients in batches. When it starts to get too stiff to mix with a spatula, use your hands until a nice stiff dough forms. Add the chocolate chips and mix with your hands again.

    Roll dough into 1 inch balls and flatten into a disc that's about 1 1/2 inches in diameter. Place on an ungreased cookie sheet about an inch apart.

    Bake for 10 minutes. Remove from oven and let cool for about 5 minutes, then set them on a wire rack to cool completely.

    Variations:
    For chocolate chocolate chip cherry cookies, replace 1 teaspoon of the vanilla with almond extract, and replace 1/2 the chocolate chips with dried cherries.

    For chocolate nut cookies, replace 1 teaspoon of the vanilla with a nut extract (almond, walnut, what have you) and replace the chocolate chips with 1 1/2 cups chopped nuts (hazelnuts, almonds or walnuts all are good).

    I think if I made the recipe again, I'd cut down on the oil. I made them last night and they looked a little oily and they are very sticky (but are delicious)

    ... thanks a million StarBright, DD & i made these this arvo

    oh my they are sooooo tasty, both DD & i couldn't stop sticking our fingers in the batter and eating it (and i'm not a big batter fan so that's saying something )

    WOW it does make heaps & heaps, reckon about 40 (do you think i counted while i ate them along the way ) ... filled two cookie jars

    ... and they are HUGE in size !!! ... so ladies making them make sure you give plenty of room to expand on the baking tray !!!

    SB wannna laugh i made a batch each at 10mins, 12mins & 15mins ... and i have to say either the 10 or 12mins is the WINNER (15mins was too crunchy on edge for my liking, and like you SB i like the middle chewy !!

    Definately need 1.5cups at least (Nestle pkt of choc chips holds that much), so that's what i put 1.5cups. One cup is not quite enough i don't think but that's just me.

    SB i too popped 2 or 3 choc chips on the top of each raw cookie, actually i tried spoon drops but i ended up rolling them into balls, even though gooey and came out a slightly better round shape IYKWIM.
