    Hello there!

    I made brownies a couple of weeks ago, using 70% dark chocolate (following the recipe)...but they turned out a bit rich for me. Does anyone know if I have to use dark chocolate? Could I maybe use, say, Cadbury Dairy Milk, or some other kind of chocolate that might not be so rich?

    I use just normal milk chocolate but it is the cooking variety when I make them and we just luuuurve them I assume cadbury milk chocolate would be just fine.

    I think it is definitely worth a try, but recipes tend to call for dark chocolate for two reasons. In terms of taste, dark chocolate just gives it that really chocolaty kick without making it too sweet (remember, you are always adding sugar to these recipes as well). The second reason is that dark chocolate is much for stable than milk because it contains more cocoa solids and less cocoa butter. As a result, it sets firmer and make brownies / slices / ganaches etc. hold their shape properly.

    Having said all of that, I also find dark chocolate very rich and intense. I have done some substitutions as a result and find that if I substitute half of the quantity of dark chocolate that is called for with milk chocolate, it definitely takes the edge off (without the end result being sloppy of too sweet). Perhaps give that a go? Otherwise just wing it and maybe your chocolate brownies will be perfect with just milk chocolate. Good luck

    ETA: 70% dark is really full-on. Maybe try just using the regular Cadbury's dark chocolate?

    I make mine with just plain cocoa and they are beautiful they dont last anymore than a few hours in my house which sucks, because when I go to get more they are all gone, lucky they are easy easy easy to make. Let me know if you are interested in the recipe.

    There is a simple and tasty recipe on the back of the Nestle cocoa powder tin which doesn't require chocolate (though does call for white choc chips as I recall)
