    Hi Soul,

    Here is my favourite boiled fruit cake receipe which I make EVERY year without fail. I have passed it on to so many people and they all love it!! It is so moist and yummy!! I always soak 1kg of mixed fruit in double the amount of sherry stated to make two scrummy cakes in one go. I just use the packet of mixed fruit rather than buy it all separtely, which is so much faster. Give it a try and see what you think.

    BOILED FRUIT CAKE
    500g mixed fruit
    1/2 cup sherry
    1 cup water
    125g unsalted butter
    2 tablespoons golden syrup
    1 cup dark brown sugar
    1 teaspoon bi carbonate soda
    1 tablespoon boiling water
    2 beaten eggs
    1 cup self raising flour
    1 cup plain flour
    1/2 teaspoon mixed spice
    1/4 teaspoon nutmeg
    1/4 teaspoon cinnamon
    1 teaspoon vanilla
    Blanched almonds to decorate

    Soak mixed fruit in sherry overnight. Place fruit, water, butter, golden syrup and dark brown sugar in a large saucepan and slowly bring to the boil. Remove and add bi carbonate soda mixed with boiling water. Cool for 15 minutes and add lightly beaten eggs and mix. Fold in sifted flours, spices and essence. Place in well greased and lined cake tin. Cook in an oven pre heated to 160 degrees for 1 1/4 to 1 1/2 hours. Cool in tin.

    Soul, please let me know how it goes!!! It is SOOO yummy!! Everyone looks forward to me making it. I normally give some away as Chrissy pressies as well!! I normally use a square tin when I make it, but round would be fine too. It is quite a deep cake, so a deep tin is best!! Have also made it with normal brown sugar when I didn't have any dark brown and it was still as good, just looked a little bit lighter in colour when cooked!! ENJOY!!!!
