Thought I would post my Cheesecake I made a few weeks ago.
It was yummy....but very VERY rich and sweet so be warned.
I have a picture of it in my gallery coz I was that impressed with it HEHE
TOFFEE CHIP CHEESE CAKE
-150g plain choc biscuits crushed (kids love helping with that)
-60g butter, melted
-3/4 cup sugar
-1/4 cup water
-250g cream cheese
-395g sweetened condensed milk
-300ml sour cream
-2 tsp gelatine dissolved in 2 tbsp hot water, cooled
-100g Milk Choc melts, melted
-22/24cm springform pan
1.Combine biscuit crumbs and butter, press into base of pan, refrigerate until firm.
2.Combine sugar and water in a pan, stir over low heat until sugar has dissolved, simmer until golden without stirring. Pour over lightly greased tray, cool. Place toffee pieces into food processor, process into small pieces.
3.Beat cream cheese until smooth, add sweetened condensed milk and sour cream, beat until combined, beat in gelatine and then fold in toffee pieces.
4.Pour 2/3 of mixture over base then swirl in choc. Pour remaining mixture and refrigerate until set.
The choc make a nice crispyness to this and the toffee a yummy sweetness.
Tomorrow morning I am trying out another recipe that I got but for a baked one.
Heres the recipe:
MOIST CHOCOLATE CHEESECAKE
Base
-2 1/4 cups crushed chocolate biscuits
-140g melted butter
-1 egg (optional)
Filing
-150g melted dark choc
-500g cream cheese
-1/2-3/4 cup castor sugar
-3 eggs
-1 cup light sour cream
-2 tbsp coffee or chocolate flavoured liqueur OR 2 teaspoons vanilla essence
1.Combine biscuit crumbs, butter and the beaten egg (if using). Press the mixture into the base.
2.Beat together the melted chocolate, softened cream cheese and sugar, mix thoroughly.
3.Add the eggs and beat, stir in the sour cream and coffee/liqueur/vanilla.
4.Pour into prepared crust and bake in a moderate to low oven (180 degrees-ish) for 1 hour.
5.Cool in oven then chill for several hours before serving.
Sounds yummy and just want bump (me) feels like.

Bummer my Choc Cheesecake got a tiny bit burnt on edges and I think underneath somehow....thats what happens when you ask a man to watch a cake!! It was to be in for 1 hr, which is how long the timer was set, but if 'someone' had kept an eye on it it could have been taken out 5 mins earlier.
My guest were nice enough to eat it but I know it wasn't how it was supposed to be. Message - BellyBelly Member Photo Gallery

these sound great! I did my first ever cheesecake last weekend (a baked one) and the recipe said approx 1 hour, so I checked it after 45mins but it had gone born on top already! Mmm next time I might start checking from a half hour!
How much difference to baking time does the size of the tin make? I used the correct one (22cm) but I had to borrow it as I only had a 19cm springform.
