Default Muffin Recipes - Fave BB Muffin Recipes!

Yesterday I had a ginormous craving for muffins, so I got out the old recipe book and made some peach muffins (modified a blueberry muffin recipe). They were shocking #-o , really hard, not light and fluffy at all.

Does anyone have a really good muffin recipe to ease the craving?? =P~

(note from BellyBelly: sticking thread as it has lots of yummy muffin recipes here!). I have also consolidated all these recipes on the main site in the muffin recipes article.

I'm not sure if you are into Banana muffins at all, but I have a banana cake recipe that makes fantastic muffins. People always seem to love them.

    125g butter
    1/2 cp caster sugar
    2 eggs, lightly beaten
    1 tsp vanilla extract
4 very ripe, medium sized bananas, mashed
    1 tsp bicarb soda
    1/2 cp milk
    2 cps SR Flour

185g cream cheese, cubed and softened
1/3-2/3 cp sifted icing sugar to taste
    lemon juice to taste

Preheat oven to 180 deg C. Line muffin tin with muffin cases. Beat together butter and sugar until light and creamy. Gradually add eggs, beating well after each addition. Add vanilla and bananas and beat until just combined (the mixture may look quite curdled, but it is fine). Dissolve the bicarb soda in the milk. Use a large metal spoon to alternately fold in flour and milk/bicarb mix. Fold until just combined and smooth, don't over stir. Divide mixutre up into muffin tin. Bake for 15-20 mins or until top is just golden and a skewer comes out clean. Let cool for 20 mins - 1/2 hour on a wire rack (or until they are only just warm) and then ice.

To make icing: Beat cream cheese and lemon juice until smooth. Gently beat in icing sugar. Spread over top of muffins.

    Makes 15-18 average-ish sized muffins.

Here's a savoury one for you, and they're pretty tasty!

    Savoury Muffins

    1/2 cup SR Flour
    1/2 cup Wholemeal SR Flour
    1 egg
    1/3 cup milk
    1/8 tsp mustard
    1/8 tsp cayenne pepper
    60g cheese, grated
    1/4 onion, diced

    1. Sift both lots of flour, mustard and pepper into a bowl.

    2. Add cheese, onion, egg and milk; mix well.

    3. Put spoonfuls into patty cake tin.

    4. Cook for about 20 minutes at 200 C.

Note: I quite often put in some diced ham or bacon for some extra flavour, and I have also made the recipe without the Wholemeal SR Flour - I have just used extra of the other SR Flour. You can omit the mustard and pepper if you like and just add more or less cheese/onion to taste!

I made one batch with extra milk as I didn't have sour cream but I was a bit disappointed in them. I just made another batch today (OMG, I am naughty!) but I used the sour cream that I got when I did the grocery shopping yesterday and they were great. I also used milk choc-bits instead of dark choc-bits and I iced them with a choc-hazlenut topping!

    Triple Choc Muffins

    2 & 1/2 cups SR Flour
    1/2 cup baking cocoa
    3/4 cup sugar
    1 cup milk choc bits
    1 egg
    1 & 1/2 cups milk
    100g melted butter
    200g Dark Melts
    1/4 cup cream

    Oven temp 200c for 20 - 25 mins
Sift Flour and baking cocoa into bowl, stir in sugar and milk choc bits.
Whisk egg and milk together, add to dry ingredients with butter and mix well.
    Spoon into 12 muffin cases.

Mix dark melts and cream in pan, stir over a low heat until melted. Allow to cool and spoon in top of muffins.

They are so yummy. I use Nestle baking stuff as i think they taste better than shops own.

Giving the gift of life to a friend..

Default Cheats white choc chip & raspberry muffins

I bought a pkt mix (I never buy pkts & make all cakes etc from scratch) But at NQR I saw a pkt of Betty Crockers White Choc Chip muffins.
So I grabbed them & on the side it said for a variation add raspberries or blueberries...

So I grabbed a pkt of frozen raspberries (worked out cheaper than the fresh ones)
I added 1.5 cups to the Pkt mix (made as per pkt) & cooked & OMG, these are DELICIOUS!!!!!

I went back & grabbed 2 more pkts & served some up for our dinner party on Saturday night & my BIL (whom is a chef) said they were so delicious & asked for my recipe, so I snuck away & made a hamper for him... I popped a spare box of muffins & the frozen raspberries ina basket for him with a wooden spoon!!! Noone could believe it was a pkt (as I am renowned for me cakes etc)

    SO EASY!!!!!

Default Does anyone have a good savoury muffin recipe for kids?

Hi all, I'm going to have a week of no added colours, flavours or preservatives this week, and see if I can tell the difference with my kids. Today I bought two mini muffin baking trays, and I thought it would be great to make some nice savoury muffins for snacks. Any ideas?
