Ok I just made the kids... and I did them with nuked potato and not nuked. Not nuked is easier to make and comes out cooked fine. Because of how long you cook the cheese side to get it golden and due to the oil from the cheese it cooks the potato fine, and its easier to spread the potato as its not sticky as it is when it comes out of the fry pan.
The pancake recipe I used was:
1 cup SR
1 cup milk
1 egg
My SR is a bit old so I needed to add baking powder, but honestly I'd probably add a tsp of baking powder so its more fluffy anyway...
AND I had one sliver, and it was YUMMMMOOOO!

I love pancakes with lemon and sugar!! Just for interest in Poland Fat Tuesday is celebrated by making donuts filled with jam and coated with lemony icing:)

I did the potato pancakes and they were YUMMO, a big hit! I realised too late that I didn't have sour cream to go on them though :doh: (I love sour cream).
Cai, my pancake recipe calls for 100g flour and 1tsp of BP, so I used 150g flour and 1.5tsp BP. It worked really well! I think I went into overkill with the potato though - as well as making the batter thicker, I did the potato on the fine setting on the food processor, and I also nuked it a bit. I think it would be easier to handle without nuking it, and as long as it's grated small it would cook quickly enough. All lessons for next time, I'm sure there will be one :D So thank you, everyone loved them.
I then did my usual batter, and stacked them up high. On the table I had different jams, lemon juice and sugar, cinnamon sugar and butter, and maple syrup and ice cream. All soooo yummy! We had a ball, and have decided that we need more than one Pancake Tuesday a year ;)

I made these for dessert last night. Soooooo yummy with choco mint ice cream. I think I got the recipe off here a couple of years ago.
MILO PANCAKES
3 eggs separated
1 cup buttermilk (makes them light/fluffy)
1 1/2 cups self raising flour - sifted
1/2 cup milo
1/4 cup brown sugar - firmly packed
1/4 cup milk choc melts - optional
cooking oil spray
1. Whisk egg yolks and buttermilk until smooth
2. Combine flour, milo, sugar. Make wll in centre and gradually stir in buttermilk mixture. Stir to form a smooth batter. Add in choc bits if desired.
3. Beat egg whites in separate bowl until firm peaks form. Fold in egg whites in 2 batches - don't beat in, best to use metal spoon so don't loose the air.
4. Use non-stick frypan, spray lightly with cooking oil. Drop tablespoons into pan. Cook on one side until bubbles start to form. Gently turn over and they should start to puff up, leave for approx 1 min. Remove from pan and enjoy warm or cold.
