not really though - i found the cakes themselves quite straightforward & they came out well.
My Effort -
I only has 1 round and 1 square tin so just made single layer cakes

Its a nice cake, for me though I am not a big cake eater so the piece I cut myself left me feeling sick :rofl: but it was delish and really the flavour cannot be picked, though I could taste a bit of the chocolate.I also only used 50ml of the red colour as that was the size bottle hubby brought home.
An impressive looking cake though, I will make this next weekend for my besties babyshower - she wants cupcakes but that will be too much to transport to her place :rofl:

I just made some cupcakes. i think they turned out well but since DS1 has 23 classmates plus a teacher the only quality control I could exercise was licking the bowl and I had to fight the boys for that.
I used a cream cheese frosting with lemon zest in it because it's my favourite.
I think next time I make it I will just sieve the cocoa in with the dry ingredients and add the food colouring with the wet ingredients because I used the Wilton's gel and it didn't really make a paste so much as a few chunks that took a lot of work to mix in.

I made these yesterday, and oh my gosh! The cupcakes are amazing! Very much in love with them and now just looking for a special occasion to make them for lol. As for the icing though, I failed :( The butter just never really got fluffy, and the flour mixture was a bit blurgh. So when they were put together the icing never got properly thick, never made peaks. I think it was because I used skim milk & low fat/low salt butter. So going to have another go soon with 'real' milk and butter. Can't wait!
How does the cake freeze? Have to make one for boxing day.

Zap, I froze some cupcakes for DH to take to work for smoko. They're still good when he eats them at about 9:30, after taking them out of the freezer at 6:15. I have no idea how the icing goes considering mine's a fail anyway lol.
Gonna make more tomorrow while I still have the buttermilk, I will master that icing!
lashes, I don't think it counts as breaking a no bb rule if you have to come on for a reference... ;) Especially for cake. I am so glad I have another rv convert!
Kaytee, the butter takes *ages* to beat. Sometimes I even put it on to whip while the cakes are still in the oven. It could have had something to do with the low fat ingredients, but not sure. I am sure you will master it! also, for buttermilk, you can just add lemon juice or vinegar to ordinary milk. (its cheaper and easier)
Zap, just freeze as for normal cakes, uniced.

Netix, I have mastered that icing! The type of butter and milk definitely makes a huge difference. Last time I was whipping the butter for *ages* and it just looked like it was getting too warm and wanting to melt though. With the 'real' milk and butter, the colour of the seperate parts was even different, and the taste was better. And I was able to pipe it!
So stoked with this recipe, I love these little cakes :)
Yay for you Kaytee :cheer: ! Aren't these cakes just the most divine things? Also, if you don't overfill the patty pans, they are easier to ice (i pipe the icing on too) and seal the cakes, keeping them moist and super yummy.
The iced cakes are best served at room temperature, but do watch the icing doesn't melt now we're into Summer. The icing is also delicious on warm scones.
I just printed this recipe cos I am making it for xmas. I was going to ask if the icing was thick enough to pipe, but I just read that it is!

Yep, definitely okay to pipe! Obviously if the icing is too warm or too cold, it won't work so well. In general, at the time you've made it is good. Make the icing before you really need it, sometimes it just seems impossible to get the flour and butter to cook properly, or takes ages for the butter to whip up. It can sit happily, covered at room temperature (not too warm), or in the fridge, but do take it out and allow it to come back to room temperature before needed. The same goes for serving.
You *could* tint it green so that you'd have red cake and green icing for a Christmas theme, but that could could look a little creepy. Decorated with gold or silver cachous/coated chocolates, holly leaves, etc, could look just as impressive. Instead of being a red velvet cake, perhaps you could tell your guests it is a Christmas Holly cake.
If you ask me, I think it is definitely far superior to cream cheese icing, but I could be a little biased ;). Like I said above, it's great spread on scones (have tried it on both plain and date scones), and probably anything you would served with whipped cream. My friend calls it "Portable Ice Cream", because, well, that's what it tastes like. I might even make some to serve with my Christmas cake or light pudding. Depends, it would have to travel to Melbourne, in the car for about 5 hours.

This was my first attempt at piping icing, and after a few messes it worked great :) I reckon piping dots all over with the star attachment and dropping on gold and silver cachous would be beautiful for Christmas! I reckon the flavour of this icing is perfect for the cake, I just don't think cream cheese icing would be right.
And yeah, don't let it melt! Mine started off on the way to a picnic looking perfect, then we got held up in 30 minutes of road works. By the time we got there DD was a crying mess so I had to carry her and the cupcakes took an unintended ride in the pram lol. They didn't look so great when we arrived!

I reckon it might survive better if you kept the icing seperate and could keep it cool, and then iced them when you got there. If you're worried about the food dye, you could try the beetroot juice option?
I just made this icing as a trial for xmas. It was nice, but the buttery taste was too much. And I love butter over marg any day. The only thing I did different was halve the ingredients so it wouldn't make so much.
Is is supposed to taste really buttery?
I don't think so Tasha, mine didn't taste buttery at all. Did it go white or was it still yellow?

I prefer cream cheese frosting - the zesty flavour seems to balance the cupcakes better.
That might explain the buttery taste - dunno if it would be the type of butter, or not whipped enough. But if you like the cream cheese icing and it works, they'll be great :)

Mine never tastes buttery, just like vanilla ice cream pretty much... You do have to let the butter whip for ages, until it is as white as possible. But, if you prefer cream cheese icing, its a popular choice.

Maybe just try again with a half size batch of the French Cream? Sometimes I will actually get the butter on and whipping just after I put the cakes into the oven. When whipping butter, it's a good idea (I know on my machine at least), to stop the beaters every now and again and scrape all the butter off the bottom of the bowl and the sides, just to make sure that it ALL gets whipped, and no yellow bits remain.
I realised yesterday that I couldn't have made this for Christmas, as my mixer still hasn't made it to my 'new' house (we've been here about two and something months, and it's still parked in a friend's barn about four hours away!)
ETA, also scrape the butter off the inside of the beaters.

Anyone tried this cake with fondant icing? Was thinking of making it for a 25th bling cake!
I haven't Zap, but the cake itself is a bit more dense than a sponge, so it could hold up under fondant. Good luck with your bling cake.
