Thanks for posting the recipe Lolpigs. I could probably use Rapadura sugar instead of the muscovado and feel like I'm not eating anything bad :) Cos Rapadura has nutrients, therefore it's good for you. Therefore these cupcakes would be good for me....;)
I'd need to substitute the ground almonds though. Nut free atm.

Its a nice cake, for me though I am not a big cake eater so the piece I cut myself left me feeling sick :rofl: but it was delish and really the flavour cannot be picked, though I could taste a bit of the chocolate.I also only used 50ml of the red colour as that was the size bottle hubby brought home.
An impressive looking cake though, I will make this next weekend for my besties babyshower - she wants cupcakes but that will be too much to transport to her place :rofl:

I just made some cupcakes. i think they turned out well but since DS1 has 23 classmates plus a teacher the only quality control I could exercise was licking the bowl and I had to fight the boys for that.
I used a cream cheese frosting with lemon zest in it because it's my favourite.
I think next time I make it I will just sieve the cocoa in with the dry ingredients and add the food colouring with the wet ingredients because I used the Wilton's gel and it didn't really make a paste so much as a few chunks that took a lot of work to mix in.

I made these yesterday, and oh my gosh! The cupcakes are amazing! Very much in love with them and now just looking for a special occasion to make them for lol. As for the icing though, I failed :( The butter just never really got fluffy, and the flour mixture was a bit blurgh. So when they were put together the icing never got properly thick, never made peaks. I think it was because I used skim milk & low fat/low salt butter. So going to have another go soon with 'real' milk and butter. Can't wait!
How does the cake freeze? Have to make one for boxing day.

Zap, I froze some cupcakes for DH to take to work for smoko. They're still good when he eats them at about 9:30, after taking them out of the freezer at 6:15. I have no idea how the icing goes considering mine's a fail anyway lol.
Gonna make more tomorrow while I still have the buttermilk, I will master that icing!
lashes, I don't think it counts as breaking a no bb rule if you have to come on for a reference... ;) Especially for cake. I am so glad I have another rv convert!
Kaytee, the butter takes *ages* to beat. Sometimes I even put it on to whip while the cakes are still in the oven. It could have had something to do with the low fat ingredients, but not sure. I am sure you will master it! also, for buttermilk, you can just add lemon juice or vinegar to ordinary milk. (its cheaper and easier)
Zap, just freeze as for normal cakes, uniced.
