We make our daiquiris with Bacardi and mango liqueur. Bit of OJ to liquify it a bit. Whizz it in a big jug with a hand mixer. It's very yummy and reminds me of summer and Christmas.

haven't read all the reponses here but wanted to post cos i remembered the thread title
i just got an email from lifestyle food with at least 8 mango recipe links on it - i'm guessing if you go to the lifestyle food webpage and put mango as your ingredient, you'd get heaps!
We used to freeze em as puree then pop em straight into a smoothy. Or in Mango chicken (like apricot but trade mango and apricot) cheesecake...Ummmmm

I also pureed some and made up some lemon jelly to set it, used the mango puree instead of the cold water you add IYKWIM. Was really yummy and the lemon really cut through the super sweet mango
You could also freeze some puree to add to muffin mixes, pancakes, sauce for ice cream when you feel like something mangoey
Whenever I have an abundance of mangoes and can't eat them all fresh I puree and freeze them, then use them in:
Curries, mango smoothies/slushies, icypoles, mango & coconut icecream, muffins/cakes.
I also do a chicken salad with grilled chicken marinated in lime or lemon juice, soy, garlic, a touch of ginger and kaffir lime leaves. In the salad I use lots of mint and/or coriander, then do a mango vinaigrette (pureed mango, finely chopped coriander, mint, or Thai basil, olive oil, black pepper and a little white wine vinegar). I'll chop some whole mangoes up in the salad too. You can do almost anything in the salad, I tend to use spinach leaves, lots of herb leaves, and sometimes I'll use rice noodles as well.
Another mango dressing that works really well is mayo, mango, seeded mustard, pepper, a little oil and white wine vinegar.
Mangos, especially if a little under-ripe, work brilliantly in stirfries and Thai style salads, or in any mixed salad as the sweetness is contrasted beautifully by vinegar. Or with coconut, or onion as a sambal to go with curries.
Way too many mangoes in this household as well! We picked 12 boxes with an average of 200 per box off a farm owned by family friend... every second night we cheek, halve and peel about 50 and put 10 pieces in a zip lock bag - our chest freezer has never been so full! We puree what's left around the seed and freeze in ice cube trays! After last night we have 134 to go - over it HAHA
As for recipes my fav would be imitation weise bars (SP?) Cream about 100g of sugar with one egg, add 600ml of cream and whip it to thick (I have a thermomix so that makes it much easier) add puree (equivilant of 3 good sized mango) and some crushed macadamias - freeze and enjoy YUMMY!! Being preggas in this heat I would kill (ok maybe not kill but harm) for a mango daquiri.............. *drools*
