    Hi.
    I really feel like some yummy sticky date pudding with carmamel sauce.
    OOOO so hot and warming and very naughty
    Anyone with an easy recipe?

    Here is an easy one for you and delicious!

    200g dates- chopped
    1 tsp bi-carb soda
    60g butter- softened
    3/4 C caster sugar (i use brown sugar)
    2 eggs
    1 1/2 C SR flour
    1/2 tsp vanilla essence

    Preheat oven to 180 degrees.
    Grease 18cm square tin. (Can line with baking paper to stop sticking, i am usually too lazy!)
    Put dates in a bowl, add the soda, pour over 300ml boiling water, sit aside. (Will foam a bit)
    Beat butter and sugar until pale and fluffy. Add eggs one at a time, beat well.
    Add flour, dates and their juice, and vanilla, mix well.
    Pour into tin, bake 35-40min.

    SAUCE- While pudding cooking, mix 125g butter, 3/4 C brown sugar, 200ml of cream in saucepan. Bring to boil and simmer for 5 min.

    Cut up, pour over sauce and enjoy! YUM!

    So you put in the dates and the 300ml of water and Bi-carb mix? or drain them? What juice do you mean?

    Yeah, the dates/bicarb/water mix all goes in, it's a fairly runny mixture, but it works out fine!

    Ange, I made this tonight and it was absolutely beautiful! DH is on his second helping, with heaps of vanilla ice-cream! Thanks so much, its such a quick and easy recipe.

    I made this the other day for us and friends and it was YUMMO!!!!!!!!
