My DD2 is turning 1 in 2 weeks and we are having a party for her. I want to make her a cake (i know she wont eat any but i still want a cake) but i need one that doesnt contain eggs as my DD1 is anaphylactic to them so 1- i dont have them in the house and 2- i dont want her to miss out on some birthday cake and 3- i am sick of always only been able to serve ice cream cake.
I didnt know you could get an egg replacer? Cant you tell me what its called and where to get it from? I would still love a recipe though as it would be handy to have one anyway as i'm sure DD1 would love to bake a cake with me Thanks
I bake by feel sorry, so will have a look for a cake recipe for you, but when I cook egg free I use egg replacer as well.
I just use any recipe and replace egg for egg replacer. We are allergic to dairy in our house & have friends allergic to egg, so I am used to baking for us all.
Plain ol Cake:
1 cup self- raising flour
1/2 tsp salt
125 gm butter (or nuttlex in this house!)
1 cup white sugar (preferably caster but you could use any white)
2 eggs**** OR I buy from the health food isle egg replacer, OR you could use a spice grinder or work really hard at mortar and pestol and grind 4 tsp lindseeds with 2 tbsp water until its slightly gelatinous**
1 tsp vanilla extract or 1/2 vanilla pod
3/4 cup milk (or rice milk in our house)
Grease your pan, a general cake tin will do... pre heat your oven to 180 C.
Cream the butter and sugars together first until light and fluffy, add vanilla and milk, continue beating (I use a handheld mixer) and then add eggs** one at a time. Continue beating for a few minutes. Sift together the flour and salt and add slowly to the wet mix.
Orgran gluten free No Egg natural egg replacer.(from the health food section in coles or woolies)
Egg free dairy free birthday cake
1/4 cup water
2 tablespoons vegetable oil
2 teaspoons baking powder
3 cups plain flour
13/4 cups caster sugar
1/2 teaspoon vanilla extract
1/2 cup Nuttelex polyunsaturated table margarine>
Extra 1 1/4 cups water
Extra 2 1/2 teaspoons baking powder
Hundreds and thousands to decorate
Creamy vanilla frosting
1 1/2 cups Nuttelex margarine
4 cups icing-sugar mixture
2 tablespoons hot water
1 teaspoon vanilla extract
1. Grease two deep 20cm-round cake pans; line bases with baking paper.
2. Beat water, oil and baking powder in a large bowl with an electric mixer on low speed for about 30 seconds or until combined. Add remaining ingredients; beat mixture on low speed for one minute or until just combined. Increase speed to medium; beat for about three minutes or until mixture is smooth and thick. Divide mixture evenly among prepared pans.
3. Cook in a moderate oven, 180C, for about 35 minutes or until cooked when tested. Stand cakes in pans for five minutes; turn onto a wire rack to cool.
4. Creamy vanilla frosting. Beat margarine in a small bowl with an electric mixer until light and fluffy. Gradually add icing-sugar, beating until combined. Beat in water and vanilla extract until just combined.
5. Sandwich cakes together with one-third of the frosting. Spread remaining frosting over top and sides of cake. Decorate with hundreds and thousands.
