    Wink What do you eat...

    When you don't know what you want? Or when it's late and you don't want to cook?

    What's your fall back food?

    I teach Mon and Tues nights and often i'm not organised enough to sort out dinner before we get home. Tues is pizza night for the kids so often I don't have anything sorted for me and I can't be bothered at 8.30 at night.

    So...hit me with your suggestions and favourites

    anti-pasto platter (sundried tomatoes, olives, feta, cold meats etc) - something light that won't make me feel bloated before bed

    I have even resorted to those "diet" shakes (pumped up with full-cream milk & thrown in some frozen berries)

    i usually just have a tin of sweet chilli tuna on a vitawheet or ryvita biscuit! - if i can be bothered, ill boil some pasta (only takes 10 mins!) and mix the tuna thru that

    Baked beans or spaghetti on toast

    Toasted sangas

    Basic omelette

    Punks' suggestion about the platter is a good one. I remember when I was living with some girlfriends in a country area, if it was stinking hot we'd sort of only really wanted to pick at stuff anyway so it worked well. You can make them as healthy or as indulgent as you wish!

    Banana smoothie, curried egg sandwich, garlic mushrooms on toast (I had that tonight!), cereal.

    That's all I can think of for now.

    Cereal.... my sisters often joke at the amount of times I have eaten cereal for dinner because I can't be bothered to organise anything else

    I normally just have a vegemite sandwich or when i was at home with my parents used to eat weet bix alot... Oops

    Jacket potato with sour cream, shallots and bacon. Sooo quick and easy. mmmm
    Toasted sandwich is another good one.
    Make a kinda slack cesear salad using chicken nuggets

    2 min noodles with frozen veg, butter & cheese mixed through ..
    pasta with pesto or flavoured tuna ...
    rice cooked with frozen veg added at end of cooking (in microwave) with salsa stirred through

    or the lean cuisine that's always in the freezer

    My fall back meal is baked beans on toast !

    I justify that its not that bad as the can states its equivalent to 3 serves of vegies .

    Toast. Mueslie (I prefer to eat this before bed instead of dessert... I suffer from insomnia and the heaviness of the oats stops me from feeling hungry when i wake up). Eggs... scrambled.

    Can't go past tomato soup with vegemite on toast. I thought having vegemite toast with tomato soup was the 'norm' until we had it for dinner one night and DF looked at me like I was crazy when I came out with the toast as well as the soup! lol

    I usually do something interesting on toast...

    * Toasted grain bread with spicy eggplant relish, tasty cheese and a fried egg.

    * Toasted grain bread with peanut butter, sliced banana and a drizzle of honey

    * Heat baked beans and melt through some really tasty cheddar and tabasco sauce, fried bacon too if you have it... eat out of the saucepan with toast fingers stuck in if in a rush!

    * Or how about french toast with maple syrup and some kind of fruit if available, eg sliced nana or berries.

    Oh. my. I need to eat something NOW!
