1-2 TBS olive oil
1 large oion finely chopped
2 cloves garlic crushed
1 large carrot peeled & finely dice
1 stick celery finely diced
1 or 2 chicken fillet (can be breast or thigh) cut into cubes
1 litre chicken stock
1- 1.5 cup Angel hair pasta
salt & pepper
Handful fresh parsley (I use 1 tsp dried)
In a large saucepan saute carrot, garlic, onion & celery for about 10 mins, adding a little water if it starts to go too brown. Add chicken & cook until brown.
Add stock & bring to boil, simmer 10 mins, add noodles, seasoning & parsley cook further 5 mins
