    soup, stew etc recipes

    I had a look and cant find a thread like this so i created one.

    I was just wondering considering Winter is upon us, if anyone have any soup, stew etc recipes that they'd like to share?.

    I've only ever used tinned soup, but i'd like to learn to make soup from scratch instead.

    I'm sure there is a soup thread around here somewehre! I have no idea how to link though, maybe somone can help.....I have posted a few recipes before I will tyr to find for you Nothing better than a yummy soup or stew on a cold night!!

    Bean and bacon soup

    2 onions
    2 cloves garlic
    1 leek
    1 cup white beans
    1 cup orange lentils
    5 cups chicken stock
    2 large handfuls of baby spinnach
    shaved parmesan

    Peel and chop onions finely.Crush and chop garlic. Wash leek thoroughly and slice. Place all ingredients into the slow cooker, except for the spinnach and parmesan. Cover and cook on high for about 8-10hrs.
    Remove the ham hock from the slow cooker. Peel off the rind and discard. Take the meat from the bone and chop. Return to the slow cooker. Turn off the slow cooker and mix in spinnach leaves. Serve hot garnished with the parmesan.

    **I grate 1-2 carrots, zucchini and sometimes some pumpkin into this to add bulk and more veg. I also don't always use all of the stock, usually adding half stock and half plain water as it sometimes turns out a bit salty from the ham hock. I have made it with just water and it turned out ok, I just added a bit of salt into the pot instead. This is my fave slow cooker recipe so far!!

    This is a recipe for a slow cooker, but I don't see why you couldn't cook it on a stove top in a heavy based pot if you don't have a SC. Maybe just add a bit more water?


    I also make a really yummy asian-ish veggie soup with noodles:


    all approximate measurements
    teaspoon of minced garlic, teaspoon of minced ginger, teaspoon of chilli (or all to your liking)
    about 1/4 of a carrot sliced finely
    1/4 zucchini sliced finely
    small broccoli florets
    small cauli florets
    red capsicum sliced finely
    1-2 mushrooms sliced finely
    1 'cake' 2 min style noodles
    1/2 tsp sesame oil
    1 tsp oil
    chicken/veggie stock (enough to cover all ingredients)

    Cook garlic, ginger and chilli in sasame oil and oil until fragrant. Add hard veggies and cook for 1-2ish mins. Add all veggies and noodle cake and cover with stock. Cook until noodles are soft. ENJOY!!
