so... I'm fat, I'm lazy and I'm extremely fussy... and now I have to make this family survive and the only way I can think of is by being a decent house wife / mother and start cooking more at home and cooking on a budget...
My husband is in the process of starting a new job, so this weeks wages will be the last until his month wages kick in 4 weeks from now.
We are a takeaway kinda family, it's quick it's easy and doesn't involve in pre planning...
However it's not cheap and I know that we can't afford it from now...
so what I'm asking for is some help in recipes that are quick easy and cheap... and good for fussy pregnant eaters (me)... I've been enjoying the last few days things that I can cook mid afternoon and reheat at dinner time
Since my first pregnancy I have problems with egg (in solid form), frozen bread & frozen potatoes. I've never eaten any type of fish / seafood, don't eat mushrooms or canned meats.
We also suck with the whole "left overs for next day" :-( I start worrying that it's gone off, that it might smell funny and then can't stomach it...

Slow cooker meals ROCK and you are best to use cheap meats in them!!
I am fussy with only eating leftovers from night before and VERY rarely generally if i really feel like something next day (eg 2 days later) I re heat very hot and have not had issues.
Maybe buy some recipe bases, I'm extra fussy and these are the ones I like
Cottage pie
Sausage casserole
Mild mince curry
Spag Bol
Rissoles
Mild creamy chicken curry
Beef and red wine casserole
Apricot chicken
Carbonara
Also chicken tonight is quite tasty...
I do these meals with pasta, rice or mash.... I also add extra veggies, beans, peas and carrot go with everything in my book
Otherwise, one of my fave easy meals (and healthy too) are pizzas. Wholemeal pita/lebanese bread, put it under the grill for a few minutes to crisp up, take it out rub a clove of garlic over (gives it a yummy flavour). Turn it over and top with whatever you feel like - cherry tomatoes, fetta cheese, capsicum, eggplant, pinapple, ham...anything goes really then chuck it back under the grill for a few minutes to melt the cheese, soften the tomatoes...easy and quick!
Wraps for lunch are good and are a great way to use up leftovers in the fridge. Use mountain bread or pita bread, and again anything goes. I like turkey breast, swiss cheese, cranberry sauce and alfafa or you could try ricotta cheese, grated carrot, snow pea sprouts and corn relish or use leftover chicken or beef and add salads like tomato, cucumber, spinach leaves...possibilities are endless.
Soup is really cheap and easy. You can cook up a big batch and then freeze in individual portions and pull it out of the freezer on the CBF days.
To save a bit of money, cut down on your meat meals. Replace with tinned lentils or cannellini beans.
Plan your weekly meals and shopping lists and try to cook meals and lunches that use the same ingredients so you don't have to buy as much food and you get to use it all up before it goes off.
thanks ladies.. I forgot to mention that I can't eat sausages (they just don't agree with me) and I've been told to try and not put on any more weight this pregnancy... almost impossible but worth a shot...
a meal plan is what's on the cards and lots of mince I believe...
