    Substituting orange juice in fruit cake

    OK. I really want to make Nigella's Chocolate Fruitcake.
    Problem is, it contains the juice of two oranges and their rind.
    I'm highly allergic to oranges.
    So, I was wondering what I should substitute this with and how much.

    I was thinking of a couple of finely diced apricots and 3/4C apricot juice maybe?

    Anyone?
    I really want some fruitcake.

    Yum, the apricots version sounds good! Does it ask for orange juice because of the acidity? Could lemon juice be used? Although I guess that may taste a bit sour lol

    Black tea? I have a fruit loaf recipe where the fruit is soaked in 1 cup of black tea and half a cup of brown sugar and it is really nice.

    I would probably try some sweet black tea using the same amount of liquid as 2 oranges contain - no idea how much that would be though.

    It must suck being allergic to oranges - there is orange in so much stuff!

    Oh yeah, JM just reminded me - there's also a version where you soak the fruit in two cups of cold coffee. I love that version!

    Kaytee, i did think of that but it has Tia Maria in it, so don't think that would go too well, and I don't really want to risk myself with that much lemon. Even though small amount of lemon are OK it's still citrus IYKWIM?

    JM, yes it does...wondered why I got so 'hungover' all those years on vodka and OJ lol...even have to scrutinise our fruit bread.
    hmmm tea's a good idea...would that go with Tia Maria though?

    eta Snap Kaytee, but coffee might be all right....might have to make a couple to test out the theories.....
