    Help please from experienced chutney makers!

    Ok, so I've got a vat of chutney cooking down on the stove. I withheld some of the sugar in the recipe, but it still seemed awfully sweet, so I added a little extra vinegar...now it seems a little on the vinegar-y side. Will this settle down as it cools, or in the jar, or should I be adding something to calm it down?

    It will probably settle down. I was a bit worried about my mango chutney, but I added a little extra sugar, and then it settled down. It's quite sweet, but it's meant to be.

    As long as you sterilise your jars properly MD it will last for months. Probably a bit late to tell you though?!

    Thanks JM, yes jars rigorously sterilised. That question was more about how long it takes for the vinegar-ness to settle?

    If it's going to settle, i find it has by the time it's cooled. I don't find the flavour changes much past the cooling time...

    Thanks JM, I sealed the jars while the chutney was hot, so they vacuum-sealed. We popped one open today, it was quite nice. But a little disappointing, it lost its cranberry-ness and was just very chutney-esque. . Oh well, it is full of love and happy vibes so I'm sure it will be good eating anyway.

    Well...final result - I fed cranberry chutney to guests on Turkey burgers on boxing day - it was da bomb! Jars were very well received as gifts too. RESULT!
