I made some rum balls but didn't have much rum.. Maybe 40mls, so I thought it be creative and put some other liqueurs in there.. I put maybe 100ml od malibu.. Didn't taste alcoholic.. So I put some frangelico in there.. About 150ml, I t still just tasted like chocolate so I poured the rest of the bottle in there which was about another 100ml... I tasted it, and it was write strong but tasted nice. Now the mixture was warm and had 100g of chocolate cake and 400g of chocolate..and 1/2cup of cream.
I put the mix in the fridge to harden and then I got maybe 35 balls out of the mix and stored them in the fridge.
We had a try of them and they no longer taste alcoholic.. At all!
There is 1 and a half cups of liqueur in there!
Is it possible for them to loose their alcohol..ness? I put some out for friends over dinner last night and they ee a big hit.. And I found that after they had sat out for an hour they were alcoholic tasting again.. What is up with that? Does this mean they go to your head more if they are warm or is it the same when they are cold?
Can somebody enlighten me.. Or call me a fruit loop?
TIA
Basically, the alcohol will be trapped in the fats in the mix...so the colder it is, the more solidified the fats, meaning you won't be able to taste the alcohol as much.
When it warms and the fats melt, the alcohol will be 'released' again.
There is really no difference in alcohol volume though, as even if eaten cold and seemingly not tasting of alcohol, the fats will again warm in your body etc.
Make sure your guests know exactly how alcoholic they are, as the volume will make a difference to their blood alcohol concentration if driving.
