Tomato relish.
1kg firm ripe toms
250g onions
250g green apples
200ml vinegar
250g brown sugar
2 tsp curry powder
Pinch of cayenne pepper
2 tsp all spice
1 chilli
2 tsp peppercorns
1 1/2 Tbl salt
Dice toms and onions sprinkle with salt and leave to sit overnight. Drain off all juice. Peel and thinly slice apple, add to Tomato and onion. Pour over vinegar and cook over med high heat until boiling. Reduce heat and cook 5 minutes stirring only occasionally. Take 2 T of the juice and mix it with curry and cayenne. Add this and sugar to saucepan. Slice chilli tie in cotton with pepper and allspice and add to saucepan. Stir well and cook on high for 5 min. Reduce heat, cover and simmer for 25 min stirring occasionally. Remove bag of spices and bottle while hot. I sterilize jars on the oven and add hot relish to hot bottles and seal with lid. Yum.
If thats too hard, the easiest recipe i know would be to buy 'easy sauce' from you supermarket and follow the recipe on the side of the bottle. It has list of spices already in the bottle.

1 1/2 C malt vinegar
11/2 Tbl mustard powder

Were eating this one now, it's yum.
All the recipes say peel toms but I can never be bothered! But if you want to cut an x in the bottom of your toms, plunge them in boiling wAter for a few moments, remove let cool a little and skin is easy to remove.
