    Recipe for squashed sultana biscuits?

    My son has a very limited range of foods he eats and we're moving overseas in a month so I'm hoping to be able to keep giving him the same foods.

    One thing he eats are Arnott's Snack Right Fruit Slice Sultana biscuits but I'm pretty sure we wont be able to get them.

    Anyone have a recipe for something VERY similar, or know how to make one up?

    Where you moving to? I've eaten similar biscuits in other counties before, not arnotts but same thing.

    Sorry I don't have a recipe but I'd love one! I have s sultana slice recipe but it's more of a cake than a biscuit....

    We're moving to the states. The only fruit biscuits I've seen there before, and can so far find online, are the fig newton pillow style biscuits.

    Take an extra suitcase with you, stuffed full of Arnott's packets...???

    Organise someone to courier packets over to you every month???

    Find out if there's an Aussie shop/mail order service there that sells Aussie imports?

    I've got one recipe which you may be able to alter to serve your needs...

    Fruity Shortbread pillows:

    250g (2 cups) plain flour
    60g (1/2 cup) icing sugar
    185g chilled unsalted butter, chopped
    1 egg
    45g fruit mince (or chopped sultanas soaked in a couple of tbsp fruit juice until the sultanas have absorbed the liquid)
    1 egg extra, lightly beaten
    icing sugar - to serve

    Preheat oven to 180c or 350F. Line two baking trays with baking paper. Place the flour, sugar and butter in a food processor. Process for 20 seconds or until mixture resembles fine breadcrumbs. Add the egg and process for a further 15 seconds or until the mixture comes together. Turn onto a lightly floured surface and knead for 2-3 minutes, or until the dough is smooth. Leave the dough, covered with plastic wrap, in the fridge for 10-15 minutes.

    Divide pastry into two. Roll one portion on a sheet of baking paper to a 5mm thickness. Lightly mark circles with a 4cm cutter (or you could just cut squares). Spoon (or spread) fruit mixture into the centre of each circle. Brush the pastry with egg.

    On a sheet of baking paper, roll the remaining pastry to a 2.5mm thickness. Pastry should be rolled into a slightly larger circle, approximately 1.5 cm extra in diameter. Lift the pastry, using the rolling pin as a lever, over the top of the first pastry sheet. Press down between the filling to seal the edges. Cut the biscuits, using a floured 4cm round cutter (or cut into squares if mixture is simply spread over pastry). Place on the prepared baking trays. Bake for 15-20 minutes, or until pale golden. Cool biscuits on trays. Dust with icing sugar.

    It says to store for up to 3 days in an airtight container and makes 18 round 'pillows'.

    Love the first two (will include Cherry Ripes for me!)... you're probably onto something with the last one too! There are Aussie imports

    Thanks for the recipe Nettie. Wonder if I need almost a runny batter to make these super thin bikkies though... hmm...
