We have some plum trees in the paddock and DP suggest i keep some jam jars and make plum jam... so how do i do it.
They seem to be quite small plums, they actually look a little like cherry's but def don't taste like them??
Plum jam = easy. Plums + sugar + heat...that's all you need.
There's a basic recipe here, but if you google you will find all sorts of fancy variations with spices etc in them (that sound very nice).
You can either stone them first or stew them down and then remove the stones with a slotted spoon. The skins have to stay on it for the pectin (which is what sets the jam). You can test
Honestly the hardest part with jam is sterilising the jars. I reuse jars so double wash them & inspect to make sure they are scrupulously clean. I then put the jars on a tray and cover them with alfoil and bake them at a low temp while I'm getting the jam done. I boil the lids in a saucepan for 5 mins or so, and I also sterilise the ladle & glass jug that I'm going to use to get the jam from the saucepan into the jars. If you put hot jam into hot jars and then seal them straight away, it sets the vacuum in the lid (like when you buy them in the shops, before the lid pops up). Just be really careful as the jam is very very hot so you need to concentrate for this part.
I was going to say - plums and sugar too!
I put my jars upside down in the oven to steralize. Put them in the cold oven though so they heat with the oven otherwise they might crack. I have heard of people using them straight from the dishwasher on the hottest setting.
