    Zuccini

    Hi ive just been given the biggest zuccini and have no idea what to do with it any ideas would be much aprecheated.

    Zucchini Slice.
    Muffins with grated Zucchini, cheese & bacon.
    Lasagna with Zucchini.

    Yep, zucchini slice, love it!

    You can also grate zucchini into almost any meal, hiding it from your kids LOL!

    I usually grate into spaggetti bog but its to big but the slice sounds good I even have most of the stuff here just need some GF flour and carotts

    If it's a REALLY big one, cut off the end (but keep it!!) scoop out the seeds and stuff it. You can do a cous cous stuffing or a mince stuffing (beef, chicken or anything you like) then replace the top, wrap it in foil and bake it in the oven at 180 degrees until the zucchini is soft and the stuffing is cooked.

    Zucchini soup - Throw any veg u have into a pot (onion, carrot, pumpkin/sweet pot, pot, etc) and lots of zucchini. Add stock and blend when cooked. Also nice with a can of creamed corn added at the end.

    make a salad...

    Get the veggie peeler, cut heaps of super thin slices. Add tomato and torn buffalo mozzerella sp? (or similar)drizzle in a little balsamic and YUMMO

    Do you have a grill pan?
    I cut mine into long thin slices, pop in a bowl with a bit of oil, some garlic and a tiny bit of salt, toss around pop on the grill pan and turn until almost burnt with a cross pattern all over it... mmm delicious.

    I made a Chocolate Zucchini a few weeks back.. was actually really nice! I just got the recipe online from bestrecipes I think.

    We also make a lot of Zucchini Slice and freeze it, great for lunches too
    Grated into pasta sauce etc
    Use it as a pizza base.. sounds odd but it is out of Jane Kennedy's new cook book.

    We have just come to the end of our zucchini plant... going to miss not have an abundant supply! Hoping we have time to get one more plant in.. with this crazy weather we might just have time!
