I usually wrap my individually in cling wrap then pop them into freezer bags.

I usually thaw them over night in the fridge.

I make batches of mini muffins for the boys lunches and freeze them in twos either in cling film or in snaplock bags.
The boys just take them out in the morning and the thaw in their lunch boxes. They dont take long at all and I have never had any complaints about frozen muffins.
