You can bottle your own pasta sauce, tomato sauce, relish etc

zucchini and tomato go so well together. Just chop and saute in a pan with some butter and black pepper. Nice side dish to any main.

Mmmm... cook down some tomatoes, onion and garlic in a saucepan, add grated zucchini and have it on toast for an easy dinner.
You could make a big lasagne and freeze it if you have that many waiting around. I always grate zucchini through my lasagne as a way to sneak another vegetable into DD :-)

If I want an easy dinner, I cut the Zuchini in to long slithers, and put the zuchcini, cherry tomatos, slithered capsicum, garlic, baby spinich, onion ect in a baking dish with olive oil and bake it, serve with steak...yummo!

Spinach and zucchini lasagna is my favourite! I usually cook down tomato, onion and garlic in a frying pan, then layer lasagna, spinach, zucchini, carrot, and the tomato mix. It's delicious! I just made up 2 massive ones to freeze for when the baby comes ;-)
