It differs so much and depends on how it is stored. If feta is stored properly in brine, it can last months. Ham on the other hand, I find can go quite quickly! (You have to remember Ham can be weeks old by the time you buy it)
I generally use fetta within 2-3 days (max) of opening, so the same would go if I bought it at the deli (which I don't because I prefer to keep it sealed in the fridge until I'm ready to use it).
Ham, and sliced meat - I start getting wary around the 3-4 day mark, although my husband will happily eat it a few days after that & never suffers. We often buy a couple of small lots and freeze them and thaw them out later in the week when we're ready to use them.
Pickled veggies - like olives, etc, usually happy to keep them for about a week, provided they are well covered in oil/vinegar.
Things that haven't been cut - like salami, kabanas etc last much longer.
