    Salads for a BBQ

    We are having a few people over this weekend (including us there will be 8 of us) and I'm on salad duty.
    I don't want your everyday boring salad but not too out there either.
    What do you put in your salads, what dressings do you use?
    Do you have a good potato salad recipe?

    I dont have a potato salad but my guests loves my baby spinach salad with roasted pine nuts and roast pumpkin drizzled in (anny brand) honey mustard dressing)

    My family all seem to perfer a potato bake rather than a potato salad.... just an idea

    I make a potato salad that i never have any left overs of, it's simple but nice

    Potatos Cut into bite size peices and I steam them or you can boil them untill tender
    Praise Creamy Mayo
    Shallots sliced finely or a finely sliced red onion (whatever you have)
    Boiled eggs chopped
    Seeded Mustard

    Gently mix all together but the potato has to be hot. You can put it in the fridge and serve it cold or make it last minuite and serve warm it's up to you!

    I do one like Samcougars and another one
    I guesstimate the portions

    Potatoes cut into 2cm cubes and cooked until just soft (a bit squishy)
    Frozen mint peas (cooked)
    Green beans (cooked)
    Bag of baby spinach
    honey soy dressing
    (I Like to add some paprika chicken as well- strips of chicken, coated with sweet paprika before cooking)

    Also....Have you ever made the salad on the back of the changs crunchy noodle packet? It's the best and always popular at our place!

    my sister makes a killer green bean salad. Blanch the beans. Chop them a bit them chuck in some halved cherry tomatoes. Any thing else that is to hand that you fancy. Dress with balsamic and olive oil and salt and pepper.

    couscous salad is yum I don't have a recipe I just wing it

    In the free mag you get from woolies there is some yum salad recipes we had lunch at mums on the weekend and she made one that had chicken,baby spinach,mandarin,macadaimias and avocado that was super yum.

    Im another that does potato bake instead of potato salad because my DS doest like salads

    For my potato salad I use;
    Fried bacon & shallots
    Boiled eggs, chopped in quarters
    whole egg mayo & sour cream.

    One of our favourite salads is a corn & avocado salad. It is dead easy and really nice as a small accompaniment to another salads. Prawn, mango & avocado salad is another favourite (we love avocado here!)

    My specialty is my watermelon salad. Sounds out there but you have to try it! I wing it every time so it's always a bit diffeent, but:

    -watermelon, cubed
    -Mint leaves
    -Haloumi or feta, haloumi fried in cubes, feta crumbled
    -Red grapes, halved
    -Small amount of capers
    -Drizzle with balsamic vinegar.

    Mmmm!

    We use the Jamie Olive Potatoe salad..very yummy

    Jamie Oliver
    Ingredients
    455g New Potatoes
    2 cloves garlic
    1 small handfull of capers
    1 small handfull of gherkins
    6 anchovy fillets
    2 large handfulls of flat leaf parsley
    1 bunch basil
    2 handful of mint
    1 tablespoon of Dijon Mustard
    3 tablespoons red wine vinegar
    8 tablespoons olive oil


    Method
    Cook potatoes in salted boling water. When perfectly cooked, drain and add dressing while potatoes are steaming hot.

    Finely chop all ingredients. Put into a bowl and add mustard and red wine vinegar. Slowly stir in the olive oil until you achieve the consistency you are looking for and balance the flavours with freshly ground black pepper, sea salt and red wine vinegar

    PumpkinZulu that sounds delicious!!!! We still have a few watermelons, so I'll use that one for sure!!!

    The combo of salty and sweet, the crunch of the grapes, the fragrance of the mint, and the balsamic...mmmmm! I think I'll make some today, it's the perfect day for it

    Haloumi is awesome but so is feta - I'm a cheese freak I lurve cheese ... Which to buy, which to buy???

    Haha same, I loveeeee cheese! Both are amazing in this salad so maybe get both and see which you like better?
