    How do you make muffins have that yummy top?

    Tonight DH baked. For the first time almost ever. It was great, I was putting DD to bed when he decided he needed chocolate so I texted directions for chocolate muffins lol. Put DD to bed, had a shower, came out to fresh baked muffins! Win!

    Anywho, they're great but they're just standard muffins. And it got us thinking about when you get one from a cafe the top has a kind of layer on it, it's all yummy and gooey. Anyone know how to do that?

    Don't overmix your mixture. Just mixed is enough.

    Fill muffin cups 2/3's full. If you over fill they get mushroom tops.

    Thanks, I was just about to bump this! He definitely didn't over mix, but I think he maybe put too much in each patty tin.

    DH remembered this afternoon that his best mate's mum used to make them with a yummy top. He seems to think she used icing sugar - maybe sifting some on before putting them in the oven, would that do anything?

    The sugar might caramelise on the top and make it a bit crusty.
    I put a sugar/cinnamon/oats mix on my apple muffins that come up kind of like a crumble.

    Hmm that sounds even better! Might sift some icing sugar on one or two next time just to say what happens and put a crumble mix on the others. Thanks

    If you put icing sugar when they come straight out of the oven it will melt and its pretty good
