I feel like making a chocolate gataeux for tonight.
Does anyone have a great recipe for me? Or where to point me to one?

Ended up making a chocolate mousse gateaux with orange.
A lot simpler than I expected and all the extended family loved it...so they said anyways![]()

It was one I found via the courier mail:
My oven only took 30 min to bake so keep an eye on it. Also I used normal dark cooking chocolate instead of melts. Oh and I used pure vanilla in lieu of the paste.Preparation: 35 minutes plus cooling and 6 hours chilling time
Cooking: 1 hour
Ingredients:
250g dark chocolate melts
125g butter, chopped
60ml (1/4 cup) orange juice
2 tbsp finely grated orange rind
4 eggs, separated
100g (1/2 cup) caster sugar
2 tsp vanilla bean paste
155g (11/2 cups) almond meal
2 tbsp caster sugar, extra
Candied orange slices, to decorate
Mousse
125g dark chocolate melts
300ml ctn thickened cream
2 tsp finely grated orange rind
2 tsp vanilla bean paste
1 egg white
55g (1/4 cup) caster sugar
Method:
1. Preheat oven to 180C. Grease and line a 22cm (base measurement) round springform pan.
2. Stir the chocolate, butter, orange juice and rind in a saucepan over low heat
for 3-5 minutes or until melted. Cool for 10 minutes.
3. Use electric beaters to beat the egg yolks, sugar and vanilla in a bowl until thick and pale. Beat in the chocolate mixture and almond meal.
4. Use electric beaters to beat the egg whites and extra sugar in a clean, dry bowl until soft peaks form. Fold into chocolate mixture until just combined. Pour into pan. Bake for 45-50 minutes or until a skewer comes out clean. Cool completely in the pan.
5. To make the mousse, stir the chocolate and cream in a saucepan over low heat for 3-5 minutes or until smooth. Stir in the orange rind and vanilla. Pour into a bowl. Cover and chill for 1-2 hours.
6. Beat the chocolate mixture with electric beaters until soft peaks form. Use beaters to beat egg white and sugar in a clean, dry bowl until soft peaks form. Fold into chocolate mixture until just combined. Spread the mousse over the cake and smooth. Cover and chill for 4 hours or until firm.
The orange was beautiful but I think I might experiment with hazelnut next time![]()
