    Dried fruit balls/energy ball recipes

    So I am baking and getting things ready for DS to take to school and I want to make some apricot and muesli balls and energy balls made out of dates and nuts.

    The thing is most have an egg in them and they are not cooked. Could I leave it out?
    I feel it would still stick together fine.

    If you have a recipe you have found perfect please share with me

    It may bind ok to start with but crumble later on - maybe do a test batch and see before you do heaps.

    Also, don't forget to check the school but policy before lovingly making snacks with nuts in them - my SIL got caught out after making and freezing a whole terms worth of snacks!

    I make some in my thermomix but you could do in a food processor.
    200g oat
    20 dates
    4 tbs coconut oil
    Dash vanilla
    Choc chip or dried fruit if you wanted...

    Process oats till fine, add coconut oil, dates and vanilla, process (looks like wet bread crumbs)
    Stir through dried fruit etc...roll into ball.

    The coconut oil binds them, so they will go hard in fridge etc..but are fine left out as long as its not too hot

    Yes that's a great idea to do a trial!

    I will still make a big batch if they work and if there is a no nut policy ( pretty sure there isn't as I have been through every info sheet from school possible, though now I will call and check) I will have them as after school snacks!

    I was going to suggest not making anything with nuts. Sometimes eggs are a no no too.

    I would hold off until he has started because sometimes it is grade based (depending on allergies of his class mates), othertimes a whole school policy.

    Olive, I dont have coconut oil. Can I use veg oil and add some coconut or coconut essence? Olive oil would be too strong methinks.

    You need coconut oil as it solidifies, health food shops sell it, as do woolies in the Asian section.
    I make these and leave in the fridge to snack on during the day, going to freeze some fir DD's lunch box too

    I make chocolate or lemon ones and put in whatever I have, e.g.

    Chocolate:

    1 cup almonds
    1.5 cups dates
    1/2 cup coconut
    1/4 cup sunflower seeds
    1/4 cup pepitas
    1/4 cup chia seeds
    2tbs cacao
    Some coconut oil
    Put all in the food processor and and a bit of water until the right consistency. Roll in coconut. Delicious chocolately goodness!

    Lemon:

    1 cup almonds
    1.5 cups dates
    3/4 cup coconut
    Zest and juice of 1 lemon
    Bit of coconut oil
    Water until right consistency.
    Roll in coconut

    The kids love them and there is nothing bad in them. Make sure you get coconut without the nasty preservatives

    Those sound yum heaven! I live two houses down from fundamental food store so I may go buy the whole shop.

    Will get coconut oil too olive!

    Is there a school lunch/snack/baking thread? I've looked to no success.

    Apricot oat and coconut balls

    1 cup oats
    1/2 cup dried apricots
    1/2 cup shredded coconut
    1 ripe banana
    2 tbsp coconut oil
    1 tsp vanilla

    Process oats until fine, add rest of ingredients. Roll into balls, roll in more coconut and refrigerate.
    The original recipe also has 2tbsp maple syrup but I've never added it as I think they are sweet enough. I just add a bit more coconut oil if the mixture isn't wet enough.

    You can get coconut oil at the health food shop. If I don't have it I just leave it out though.

    Thanks for the ideas guys. I'm thinking I could add ground flaxseed and brewers yeast and I'd have a lactation truffle! I've been experimenting with raw dough but I think next time I'll try out some of your recipes with coconut oil and the added active ingredients.

    I just got some coconut oil from my local Woolworths. As Olive said, in the Asian food section, in a jar.
