I am making fruit cake tonight for a birthday tomorrow. Short notice, huh?
I am thinking about a spiced cream cheese icing/frosting. Should I split and fill the cake with the same? Or a buttercream filling? Or something else? Or nothing?
Thank you ladies. Rouge, I did read your post on Friday, and thought about it, but in the end I went with an allspice icing, which had about 60/40 cream cheese/butter. I haven't made a cream cheese icing for so many years, I can't even remember if that had butter in it, but this one was somewhere between a cream cheese and buttercream icing. With vanilla and allspice. And it was REALLY good! .
I made it a six layer cake, with the icing between each layer. And sugared orange peel around the top of the cake. If you googled Martha Stewart fruit cake creme fraiche icing, you will see what it looked like. But I didn't use the cake or icing recipe (only the sugared peel, using orange instead of lemon).
The cake was for the Man's boss's birthday. He loved it, as did all his dinner guests. His wife was super pleased with it and has told me she will be my marketing manager for the cottage cake business she wants me to start.
Anyway, fruit cake doesn't always need fondant it turns out.
I'm not a fan of fruitcake lol. That's why I couldn't imagine it "with" anything less traditional
But that is fantastic that it worked so well. I know people either love or hate her but I absolutely adore Martha. I haven't had a recipe of hers gone wrong. If you don't have it check out the book depository for her baking handbook. It is fantastic. Most of my base recipes come from that book. I've been using it for about 8 or 9 years. And no fails.

The fruit cake I make isn't a very dark one, and it's always received well. Blowing trumpet there, lol.
I don't mind Martha, she has some really nice things on her site (terrific stylists), but I've not used any other of her recipes. I used to make sugared peel often at work, the same way, I had just forgotten how. I may just check out that book..... I get the feeling I will be making more and more cakes.... (as it is, I am going to make another surprise one, for the Man's boss's wife, it's her birthday at the end of this month).

I just wish I liked fruitcake. Just reminds me of my grandparents. LOL. Maybe my taste buds haven't grown up yet :P
Sorry for what? I must have missed it, lol. Don't be sorry. . I've just been looking up Martha's book just now! I've not 'not used' any Martha recipes because it's Martha, I just haven't used any.
As for not liking fruit cake.... Well, maybe you need to try mine, complete with allspice icing And grown up taste buds, I think I am the juvenile, we certainly don't eat like you! What I read that you prepare for your family is just a *little* more sophisticated than I
